Slow Cooker Lentil Chili

What You Need
1 medium onion, diced
1 large red bell pepper, diced
5 cloves garlic, minced
4 TSP chili powder
16 oz. bag of brown lentils 
2 (14.5 oz.) cans no-salt diced tomatoes
4 bay leaves
2 (32 oz.) cartons chicken stock
1/3 cup fresh cilantro, chopped
Sea salt
Pepper
Avocado
White cheddar

Directions
1. Add onion, red bell pepper, garlic, chili powder, lentils, tomatoes, chicken stock, and season with salt and pepper. 
2. Top with bay leaves.
3. Leave on low for 6 hours.
4. Garnish with cilantro leaves, avocado, and white cheddar.
5. Enjoy!

This also makes great leftovers when you don't feel like cooking. Just put the soup in tupperware and freeze until you need it!
