Skillet Corn & Red Pepper Salad

{Serves 5}
Makes a great side dish, salsa, or taco topping.

What You Need
4 cups corn, can or frozen
2 TBSP lime juice
1/2 TSP salt
1/4 TSP pepper
1 large sweet red pepper, diced
1/2 cup cilantro, chopped

Directions
1. Spray a large non-stick skillet with cooking spray and sauté corn until lightly brown.
2. Transfer to a large bowl and stir in lime juice.
3. Add remaining ingredients and serve at room temperature.
4. Enjoy!
