Sweet Potato, Kale, & Shrimp Skillet

{serves 2}

What You Need
2 cups shrimp, peeled & deveined 
2 TBS olive oil
1/2 cup diced onion
2 garlic cloves, minced
2 cups diced sweet potato
3 cups kale 
Black pepper & salt
1/2 TSP red pepper flakes

Spice Mixture
1/2 TSP cumin
1/2 TSP paprika
1/2 TSP onion powder
1/4 TSP cayenne pepper

Directions
1. Combine spice mixture and set aside.
2. Heat olive oil in large sauce pan over medium heat. Sauté onion and red pepper flakes until they are translucent. 
3. Add garlic and cook for 30 more seconds.
4. Add sweet potato and cook until soft (15-20 min). 
5. Add shrimp and sprinkle with spice mixture. Cook for 3-5 minutes or until cooked through.
6. Turn heat down to low and add kale. Cook until slightly wilted.
7. Season with salt & pepper. Enjoy!
