Italian Chicken & Tomato Skillet

{serves 6}

What You Need
4 chicken breasts
Salt & pepper
2 TBS olive oil
1 white onion, diced
5 garlic cloves, sliced
10 oz. cherry tomatoes, cut in half
1 cup roasted red pepper, diced
1/2 cup basil leaves, chopped

Directions
1. Season chicken breasts with salt and pepper. Set aside.
2. Heat oil in a large pan over medium high heat. Add chicken breasts and cook 5 minutes on each side. If still pink on inside, cook each side again for 5 minutes or until cooked through. Take out of pan and set aside.
3. In same pan, add onion and sauté until soft. 
4. Add garlic and tomatoes and cook an additional 5 minutes or until tomatoes start to break down. 
5. Add peppers and half of the basil leaves. Cook for 1 minute. 
6. Lower heat to a simmer and add chicken breasts back to pan. Top with remaining basil and cook until chicken is heated through. Enjoy!
