Eggplant Fries with Zesty Ranch Dipping Sauce

What You Need
For The Fries 
Eggplant 
Olive oil
Sea salt
Pepper

For The Dipping Sauce
1 egg
1/2 cup Tessemae's Zesty Ranch dressing

Directions
For The Fries 
1. Preheat oven to 400°
2. Line a rimmed baking sheet with parchment paper.
3. Slice your eggplant in fry like pieces and spread onto the baking sheet. 
4. Brush eggplant with olive oil and sprinkle with sea salt and pepper.
5. Bake in oven for 20 minutes or until crispy. 

For The Dipping Sauce
1. Crack egg into food processor or blender. 
2. Turn on the food processor or blender and slowly add dressing. **You must add the dressing very slowly to get the right consistency. Try and take about 5 minutes adding it to the egg. 
3. Once all is combined and 5 minutes is up, the dipping sauce should have a thicker consistency. 

Serve together and enjoy!!

Can be stored in air tight container in fridge for up to 5 days
