Pizza With Sweet Potato Crust

Serves 4

What You Need
1.5 cups mashed sweet potato (about 1.5-2 sweet potatoes)
1.5 cups almond flour or other flour of choice
2 large eggs
1 egg white
1 TSP baking powder
2 TSP garlic powder
1 TSP oregano
1/2 TSP curry powder
1/2 TSP paprika
1/4 TSP cinnamon
1 TSP salt

My Toppings
Eggplant
Marinara sauce
Feta
Onions
Sun-dried tomatoes
Basil

Directions
1. Preheat oven to 375° and spray pizza stone or pan with cooking spray.
2. Combine all ingredients, other than toppings, into a mixing bowl and stir until incorporated.
3. Spread the dough, about 1/2 inch thick, onto the pan. Make it thinner if you want it to be more crispy. 
4. Bake for 25-30 minutes or until the edges are brown and then remove from oven. If it is thinner than 1/2 inch, make sure to watch it closely so it doesn't burn. 
5. Add desired toppings and bake for an additional 7-10 minutes, or until cheese is melted and veggies are cooked. 
6. Remove from oven and enjoy!
