Halibut Steaks w/ Roasted Tomatoes & Asparagus

{serves 2}

Happy Monday! Today, i've got y'all a delicous and super easy seafood dish. Just stick everything in the pan and pop it in the oven...it's as simple as that. I hope y'all enjoy! 

What You Need
2 halibut steaks
Olive oil
Salt
Pepper
2 TBS ghee or butter, melted
1/2 TSP black peppercorns
2 large tomatoes, thinly sliced
1 bunch of asparagus, bottoms removed
1/4 cup basil leaves

Directions
1. Preheat the oven to 400°.
2. Rense fish and pat dry with paper towel.
3. Brush fish with melted butter and sprinkle peppercorn on. Press peppercorn into fish to make sure it stays attached. Set aside.
4. Cover the bottom of your baking dish with some olive oil. Lay the tomato slices on the bottom of your dish, trying not to overlap them. 
5. Next, place the basil leaves on top of the tomatoes and then top with the fish.
6. Place the asparagus around the fish and drizzle with olive oil and sprinkle with salt and pepper. 
7. Place in oven and cook for 10-15 minutes or until flakey.
8. Enjoy!
