Thai Chicken Zoodles

serves 4

What You Need
For The Zoodle & Chicken Dish
4 TBS oil divided (grapes, olive, etc.)
1 LB chicken breasts, sliced into strips
2 zucchini, spiralized
1 large carrot, spiralized
1 red pepper, sliced into small strips
1/4 cup cilantro, diced
1/4 cup green onion, diced
Sesame seeds

For The Sauce
1 garlic clove, minced
4 TBS almond butter
Juice of 1 lime
3 TBS coconut aminos
2 TBS cilantro, diced
1/2 TSP fresh ginger, ground
1/4 TSP red pepper flakes

Directions
For The Sauce
1. In a small bowl, whisk together the garlic, almond butter, lime juice, coconut aminos, cilantro, ginger, and red pepper flakes. Set aside.

For The Zoodle & Chicken Dish
1. Heat 2 TBS oil in a skillet over medium to high heat. Add chicken strips once hot. Sauté for 3-4 for minutes on each side, or until cooked through. Once cooked, set aside until cooled and then cut into tiny pieces.
2. Using the same skillet, heat remaining 2 TBS of oil in skillet. Add zucchini and carrot noodles. Cook for 2 minutes, stirring constantly. 
3. Place noodles, chicken, red pepper, cilantro, and green onions into a large bowl. Pour almond butter sauce on top and toss to make sure everything is coated. 
4. Garnish with sesame seeds and serve. Enjoy!
