Buffalo Chicken Casserole

{serves 6-8}

What You Need
1 head of cauliflower, grated
6 eggs
1 lb of chicken, cooked and shredded
1/2 onion, diced
1 green bell pepper, diced
1 TSP garlic powder
1 TSP sea salt
1 TSP paprika
1/2 cup buffalo sauce

Toppings (optional)
Avocado
Tomatoes
Bacon
Blue cheese
Extra buffalo sauce
Ranch dressing

Directions
1. Preheat the oven to 400° and grease a casserole dish.
2. In a large bowl, combine the grated cauliflower and eggs. Mix well. 
3. Stir in the remaining ingredients (not the toppings), and pour into the greased casserole dish.
4. Bake for 50-60 minutes or until the top is slightly brown. 
5. Top with your desired toppings and enjoy!
