Crockpot Italian Chicken Soup

{serves 6-8}

With all this cold weather, there is no better time for a big, warm bowl of soup. If you like to meal plan, this delicious Italian chicken soup is perfect! 1. It's made in the crockpot (major time saver) and 2. It makes so much that you'll have leftovers for the whole week (or you can freeze for later). Stay warm everyone! 

What You Need
3 chicken breasts
1 yellow onion, diced
2 cloves of garlic, minced
1 can (14 oz) coconut milk
1 cup chicken broth
1 can (14 oz) Italian diced tomatoes
1 can (8 oz) tomato sauce
1 TBS Italian seasoning
1 TBS dried basil
1/2 TSP sea salt
Pepper 

Toppings
Tomato, diced
Fresh basil, rosemary, thyme, parsley, etc. 
Avocado, sliced
Croutons 

Directions
1. Add everything except the chicken to the crock pot and mix.
2. Top mixture with chicken.
3. Cook on low for 7-9 hours (or high 4-6 hours) or until chicken is shreddable. 
4. Remove chicken from crockpot and shred. Add back to crockpot and mix everything together well.
5. Serve with desired toppings and enjoy!
