Sesame Chicken + Cauli-Rice

serves 4-6

What You Need
Sesame Chicken
2 TBS sesame seeds
1/4 cup honey
3 TBS soy sauce or coconut aminos
2 TBS ketchup
2 TSP sesame oil
1/4 TSP crushed red pepper flakes
3 garlic cloves, minced
3 chicken breasts (about 1.5 lbs), cut in half lengthwise 
Salt and pepper, to taste
1 TBS corn starch or tapioca flour
2 TBS olive oil

Cauli-Rice
1 head cauliflower
4.5 TBS sesame oil, divided
1 small white onion, diced
1 cup frozen edamame
2 cups broccoli, chopped
4 TBS soy sauce or coconut aminos
1 TBS sweet chili sauce
2 eggs, lightly beaten
2 TBS green onions, chopped

Directions
Sesame Chicken
1. Add sesame seeds to small pan over medium heat. Toast for about 3 minutes or until slightly brown. Set aside. 
2. Whisk honey, soy sauce, ketchup, sesame oil, garlic, and red pepper flakes into a small bowl. Set aside.
3. Add the cornstarch to a shallow dish and season with salt and pepper. Dip each side of the chicken (cut in half) into the corn starch and then set onto a plate. 
4. Heat olive oil in a medium to large skillet over medium heat. Add chicken pieces, but be careful not to over crowd them. Do separate batches if you have to! Cook each side for 4 minutes and then check to see if the chicken is cooked. If not, do an additional 4 minutes and check. Repeat if necessary. 
5. Once chicken is cooked through, turn heat down to low and add the sauce to the pan. Cook one side for 2 minutes and then flip and cook the other side for an additional 2 minutes. Make sure chicken is well coated with sauce. 
6. Remove from heat and top with sesame seeds. Keep warm.

Cauli-Rice
1. Chop the cauliflower into florets and then place into a food processor. Process until it resembles rice, breaking it up into batches if you have to. 
2. Heat the 2 TBS sesame oil in a large skillet over medium heat. Once hot, add the onion, edamame, and broccoli. Cook until soft. 
3. While the veggies are cooking, heat 1/2 TBS of sesame oil in a small pan over medium heat. Add the beaten eggs and cook like you would scrambled eggs. Once cooked through, add to the veggie mix. 
4. Finally, add the cauliflower to the veggie mix and pour the soy sauce, 2 TBS sesame oil, and sweet chili sauce on top. Mix everything together and let it heat up. Once warm, remove from heat and stir in green onions. Enjoy with the sesame chicken!!
