Gluten-Free Granola

serves 6-8

What You Need
1 cup pumpkin seeds
1 cup sunflower seeds
1/2 cup shredded coconut, unsweetened
1/2 cup coconut flakes, unsweetened
1 cup almonds
2 cups pecans
20 dates, pitted and finely chopped
1/3 cup coconut oil
2 TSP cinnamon
3 TSP vanilla
Dash of salt

Directions
1. Preheat the oven to 325° and line a rimmed baking sheet with parchment paper.
2. In a large bowl, combine all the nuts with the coconut flakes, shredded coconut, and dates.
3. In a small bowl, melt the coconut oil and combine with the cinnamon, vanilla, and salt.
4. Pour over the dry mixture and toss to combine. 
5. Place on the baking sheet and bake for 20-25 minutes. Let cool completely and then enjoy!
