Patriotic Banana Pancakes

serves 3-4

What You Need
Pancake Batter
1 1/4 cups almond flour
1/4 cup coconut flour
1/2 TSP baking soda
1/4 TSP sea salt
1 cup coconut milk
1 banana, ripe & mashed
3 eggs
1 TSP vanilla extract

Red Pancake Stars
Red dye
Star cookie cutter
Coconut oil, for frying

Blueberry Pancakes
Blueberries
Coconut oil, for frying
Powdered sugar

Directions
Pancake Batter
1. Combine all the dry ingredients into a bowl.
2. In a separate, larger bowl, mash the banana and add the remaining wet ingredients, except the coconut oil, blueberries, and red dye. Whisk together. 
3. Add the dry ingredients into the wet ingredients and mix until combined. 

Red Pancake Stars 
1. To make the red stars, separate half of the dough into a separate bowl. Add enough red food dye for the batter to become a deep red color. 
2. Preheat a pan over medium heat and coat with coconut oil.
3. Once pan is hot enough, add about 2 TBS of batter for each pancake. Cook each side about 2-3 minutes or until fully cooked through.
4. Once cooked and slightly cooled, cut out a star using a star cookie cutter. Set aside and keep warm.

Blueberry Pancakes
1. To make the blueberry pancakes, separate half of the batter into a separate bowl. Stir in as many blueberries as you'd like. 
2. Preheat a pan over medium heat and coat with coconut oil.
5. Once pan is hot enough, add about 2 TBS of dough for each pancake. Cook each side about 2-3 minutes or until fully cooked through.
6. Top the blueberry pancake with a red star and additional blueberries. Dust everything with some powdered sugar and enjoy!
