Thai Peanut Noodles

serves 3-4

What You Need
Base
2 large zucchini
2 large carrots, peeled
1 cup edamame, de-shelled
2 TBS olive oil

Dressing
2 TBS almond butter
2 TBS lime juice
1 TBS honey
2 TSP sesame oil
2 garlic cloves, minced
2 TSP chili paste

Toppings
Sesame seeds
Avocado, cubed
Cilantro, fresh
Basil, fresh
Mint, fresh
 Cashews, toasted
Lime, quartered 

Directions
1. Whisk all the dressing ingredients together and set aside.
2. Spiralize the zucchini and carrots and place into a bowl. Add the edamame and dressing and give it a good toss. 
3. Place olive oil in pan and heat over medium heat. Add in the zucchini and carrot mixture. Cook until slightly soft, about 5 minutes.  
4. Garnish with your desired toppings and enjoy! 
Don't forget the lime, the flavor makes the dish!
