Caprese Omelet

serves 1

What You Need
Omelet
1/2 TBS olive oil
2 eggs, beaten
3 small mozzarella balls, cut in half
1/2 roma tomato, sliced
6-8 basil leaves
2 garlic cloves, sliced
Italian seasoning
Salt and pepper, to taste

Toppings
Basil leaves, sliced
Cherry tomatoes, halved

Directions
1. Heat olive oil in a small skillet over medium low heat. Once warm, pour in the beaten eggs.
2. Place tomato slices on eggs, followed by the mozzarella and then the basil leaves. Then place garlic slices over everything. 
3. Sprinkle omelet with Italian seasoning, salt, and pepper and cover.
4. Let cook for 5-10 minutes or until the top is cooked through. Be sure to continually check so it doesn't burn.
5. Top with cherry tomatoes and additional basil leaves. Enjoy!
