Shrimp & White Bean Salad

serves 3-4

What You Need
Dressing
4 TSP sherry vinegar
4 TSP olive oil
1 TBS fresh thyme, chopped
2 TSP garlic, minced
1 TSP fresh rosemary, chopped
1/2 TSP black pepper

Salad
4-6 cups spring salad mix
1 cup grape tomatoes, halved
1/2-1 can (15.5 oz) great northern beans, rinsed & drained (depending on your love of beans)

Shrimp
1 TBS honey 
1 TSP water
1 LB shrimp, peeled & deveined 
Olive oil
Sea salt, to taste

Directions
Dressing
1. Combine all ingredients into a small bowl and whisk to combine. Set aside.

Salad
1. In a large bowl, add the salad mix, tomatoes, and great northern beans. Add dressing and toss until fully coated.

Shrimp
1. In a medium bowl, combine the honey and water. Add shrimp and toss to coat. 
2. Heat olive oil in a pan over medium heat and when warm, add shrimp. Cook until no longer pink, about 4 minutes. Serve on top of salad and enjoy!
