Honey & Coconut Granola

What You Need
1 cup raw almonds
1 cup raw cashews
1/4 cup raw pumpkin seeds, shelled
1/4 cup raw sunflower seeds, shelled
1/2 cup shredded unsweetened coconut
1/4 cup coconut oil
1/2 cup raw honey
1 TSP vanilla extract
1 TSP sea salt

Directions
1. Place almonds, cashews, pumpkin seeds, sunflower seeds, and coconut flakes into a food processor. Pulse a few times until the slightly nuts break down. Don't over process!
2. Preheat the oven to 275°. Line a rimmed baking sheet with parchment paper.
3. In a medium sized pot, melt the coconut oil, honey, and vanilla extract over medium heat.
4. Once melted, add in the nut mixture and stir to make sure everything is coated. 
5. Evenly pour mixture onto the parchment lined baking sheet. Bake in oven for 20-25 minutes. 
6. Once cooked, remove from oven and sprinkle with sea salt. Let sit for 20-30 minutes so the granola can form into chunks. 
7. Once cooled, break up into small chunks and store in airtight container. Enjoy!
