Sausage, Kale & Polenta Skillet

serves 4

What You Need
1 TBS olive oil
12 oz sweet Italian sausage, casings removed
9 oz prepared polenta, cut into 9 slices
8 oz kale, chopped
2 TBS water
1/2 TSP ground pepper
2 cups marinara sauce
Mozzarella, for topping

Directions 
1. Heat olive oil in a skillet over medium/high heat. Once oil is warm, add sausages and cook until no longer pink, about 5-10 minutes. You can either cook whole and then cut up or crumble them as you cook. Once sausage is cooked, remove from skillet.
2. Spread out polenta on the skillet and cook for 5 minutes over medium heat, flipping halfway through. Remove from skillet and set aside. 
3. Preheat your oven's broiler.
4. Over medium heat, add the chopped kale and 2 TBS of water to the skillet. Cook for 2-3 minutes or until completely wilted. 
5. Next, stir the sausage and marinara back into the skillet with the kale. Top dish with polenta and then mozzarella cheese. Broil for 2 minutes and then serve!
