Turkey Sweet Potato Sliders w/ Maple Chipotle Ketchup

Makes 10 sliders

What You Need
Sliders
1 large sweet potato
2 TBS olive oil
Sea salt
5 slices bacon
1 lb ground turkey
2 TBS taco seasoning
Green onions

Maple Chipotle Ketchup
6 oz tomato paste
2 TBS maple syrup
2 TBS apple cider vinegar
1 TSP paprika
1/2 TSP salt
1/4 TSP chipotle chile seasoning 

Directions
Sliders
1. Preheat the oven to 425° and line a rimmed baking sheet with parchment paper.
2. Using a mandolin slicer (or knife if you don't have one), thinly slice the sweet potato into 10 rounds (1/4-1/2 inch thick). Spread out rounds on baking sheet and brush each side of rounds with olive oil and sea salt. 
3. Once oven is ready, bake sweet potato for 30-35 minutes, flipping halfway through.
4. While sweet potatoes are cooking, make the maple chipotle ketchup (below).
5. Once you are done with the ketchup, start cooking the bacon in a pan over medium heat. Once cooked, place on paper towels and set aside. Keep bacon grease in pan.
6. In a medium bowl, add ground turkey and taco seasoning. Mix it well with your hands and form into 10 small patties.
7. Reheat the bacon grease over medium heat. Add patties and cook each side for about 4-5 minutes or until no longer pink.
8. Time to assemble- start by placing sweet potato rounds on your desired serving dish. Next place a patty on each round, top with ketchup, then bacon, and finish it off with a small sliver of green onion. Place a toothpick through it all and enjoy!

Maple Chipotle Ketchup
1. In a bowl, combine all of the above ingredients and mix well.
2. If you want it less thick, add a little bit of water at a time until you reach the desired consistency.
