Almond Butter & Banana Muffins

 Makes 12-15

What You Need

2 large bananas
1/4 cup honey
1/4 cup maple syrup
1/2 cup greek yogurt, plain
1 egg
1/4 cup almond milk
2 TSP vanilla extract
3/4 cup almond butter
1 3/4 cup whole wheat flour
2 TSP cinnamon
1 TSP baking powder
1 TSP baking soda
1/4 TSP salt
1/4 cup chia seeds

Directions

1. Preheat the oven to 375°
2. In a medium to large sized bowl, mash the bananas up with a fork.
3. Next, add in the honey, maple syrup, greek yogurt, egg, almond milk, vanilla extract, and almond butter. Whisk together until smooth.
4. In a small bowl, combine the flour, cinnamon, baking powder, baking soda, salt, and chia seeds.
5. In sections, pour the dry mixture into the wet, stirring in-between each addition. Mix until everything is combined.
6. Line or grease a muffin pan and then fill muffin cups up about 3/4 the way.
7. Cook muffins in the preheated oven for 15 minutes or until a tooth pick inserted into the middle comes out clean. Enjoy!
