Sweet Potato Gnocchi w/ Parmesan Cream Sauce

serves 1

What You Need
3 cups kale, de-stemmed and chopped
2 TBS ghee or butter
1 TBS coconut milk
1 small garlic clove, minced
Salt, to taste
2 TBS parmesan + extra for topping
Pine nuts, for topping

Directions
1. Make gnocchi and set aside.
2. Heat the butter in a large pan over medium heat. Once bubbling, add in the gnocchi, kale, garlic, and salt. Cook until the kale has wilted down and then remove from heat.
3. Let the dish cool down for about 5-10 minutes and then add in the coconut milk and parmesan cheese. 
4. Give everything a good toss and then serve with pine nuts and additional parmesan cheese. Enjoy!
