Cilantro Lime Chicken "Rice" Bowls

Serves 4

What You Need
For The Chicken
1 lb chicken breast, sliced into strips
 1/4 cup olive oil + 2 TBS for pan
1/2 cup fresh lime juice
1/2 cup fresh cilantro, chopped
2 garlic cloves, minced
1/2 TBS honey
Salt and pepper, to taste

For The Rice
3 cups cauliflower, riced in food processor
2 TSP garlic powder
1 TSP cumin
1/8 TSP sea salt
1 cup black beans, drained and rinsed
1/4 cup red onion, diced

Toppings
Avocado
Corn
Cherry tomatoes
Bell pepper
Cilantro
Salsa

Directions
For The Chicken
1. Mix the olive oil, lime juice, cilantro, garlic cloves, and honey in a bag. Add in the chicken strips and let marinate for at least 2 hours, but it's best if marinated overnight. 
2. After the chicken has marinated, heat 2 TBS olive oil in a large skillet over medium heat. Add chicken strips and marinade into the pan and cook until no longer pink, about 10 minutes. Set aside and keep warm.

For The Rice
1. In the same pan used for the chicken (if there is too much liquid in the pan, drain it a little), add the riced cauliflower and spices. Cook over medium heat for about 5 minutes.
2. Add in the black beans and red onion and cook an additional 2 minutes. 
3. Now, get your bowls ready!

Assembly
1. Spoon cauliflower rice onto desired serving plate. 
2. Top with chicken and desired toppings. 
3. Enjoy!!
