Blueberry Banana Bread

makes 10 slices

What You Need
2 ripe bananas, mashed
2 eggs
3 TBS coconut oil, melted and cooled
3 TBS maple syrup
1 TSP vanilla extract
2 cups almond flour
1 TSP baking powder
1 cup blueberries, fresh + additional for topping

Directions
1. Preheat the oven to 350° and grease a loaf pan or line with parchment paper. 
2. Using a stand mixer, combine the mashed bananas, 2 eggs, melted coconut oil, maple syrup, and vanilla extract. 
3. Next, add in the almond flour and baking powder. Mix well.
4. Fold in the blueberries and make sure everything is mixed well.
5. Pour into prepared pan and top with additional blueberries. Cook in oven for 45 minutes.
6. Let the pan completely cool before cutting into the bread. Enjoy with whatever toppings you choose!
