Cookie Dough Blizzard Nice Cream

Hello from Charleston! We have been having a blast here, spending time at the beach, bopping around King Street, and just relaxing. I have seriously been craving this dessert though...this is hands down, my favorite healthy dessert to make. It seriously tastes just like regular ice cream, without all the processed sugar. This "nice cream" is made with simple ingredients like bananas and almond milk (or milk of choice), plus no-egg cookie dough balls. This is made at least once a week in my household and definitely being made the second I get back!

What You Need
For the Cookie Dough Balls
1/2 cup almond flour
Dash of sea salt
1 TBS coconut oil, melted
1/2 TBS honey
1/2 TBS almond butter
1/2 TSP vanilla
Handful chocolate chips, I prefer the Enjoy Life semi-sweet chocolate mini chips (paleo friendly)

For the Nice Cream
1 banana, frozen and sliced
Splash of vanilla extract
Just a little splash of almond milk (or milk of your choice), you can always add more if it doesn't blend well
1/4 of reserved cookie dough 
Handful chocolate chips (same as above)

Toppings
Cookie dough balls
Almond Butter

Directions
For the Cookie Dough Balls
1. In a small to medium sized bowl, combine all the above ingredients. 
2. Set 1/4 of the dough aside and make little balls with the remaining dough. Set aside.

For the Nice Cream
1. Combine the above ingredients in a food processor. Be sure not to add too much almond milk or it will be too thin.
2. Process until smooth, adding more almond milk if necessary. It also helps to use a spoon to break up some of the big chunks.
3. Pour nice cream into desired serving cup and top with reserved cookie dough balls and almond butter. Enjoy!
