Caramelized Pork Tacos + Mango Salsa

serves 6-10

What You Need
For The Pork
1 TBS oil
1 shallot, diced
1 garlic clove, minced
1 jalapeno, minced
2 TSP fish sauce
1 1/2 LB boneless pork loin, thinly sliced 
2 TBS coconut sugar
2 TBS water

For The Mango Salsa
1 mango, diced
1/2 cup cucumber, diced
1/4 cup fresh cilantro, chopped
1/4 cup red onion, diced
Juice of 1/2 a lime (about 1 TBS)
Salt, to taste

For The Spicy Slaw
3 cups slaw mix
1/3 cup mayo (more depending on preference)
1 TBS sweet chili sauce
1/2 TSP hot sauce
1 TBS apple cider vinegar
1/2 TBS honey
Juice of 1/2 a lime (about 1 TBS)
Salt and pepper, to taste
1/4 red onion, thinly sliced
2 TBS fresh cilantro, chopped

Additional Ingredients
Corn tortillas
Avocado
Fresh cilantro

Directions
For The Pork
1. Whisk together the fish sauce, sugar and water. Place pork in a bag and pour sauce over. Let marinate for at least 30 minutes.
2. In a large pan, heat oil over medium heat. Add shallot, jalapeƱo and garlic and cook for about 2 minutes.
3. Slightly turn the heat up and add in the pork with the marinade. Cook until no longer pink, about 10 minutes. Set aside and keep warm.

For The Mango Salsa
1. Combine all ingredients into a medium bowl and set aside in fridge. 

For The Spicy Slaw
1. In a small/medium bowl, whisk together the mayo, sweet chili sauce, hot sauce, apple cider vinegar, honey and lime juice.
2. Season with salt and pepper. Taste to see if you need to add any additional ingredients.
3. Place slaw mix, red onion and cilantro in a bowl and pour mayo mixture on top. Give everything a good toss and set aside.

Assembly
1. Fill your corn tortilla first with slaw, then top with meat and then top with the mango salsa. 
2. Garnish with additional cilantro and enjoy!
