Balsamic Caramelized Mushrooms + Sweet Potato Gnocchi

serves 4

What You Need
1 1/2 lbs mushrooms, sliced
6 TBS ghee
2 garlic cloves, minced
2 TSP fresh thyme, plus more for topping
2 TSP fresh rosemary, chopped
1/4 cup balsamic vinegar
1/2 TSP pepper
1/4 TSP salt
4 oz goat cheese, crumbled

Direction 
1. Make the gnocchi using the recipe above.
2. In a medium skillet over medium heat, add 2 TBS of ghee. Once ghee is melted, add in the mushrooms in a single layer.
3. Do not stir for about 2 minutes or until they are caramelized on the bottom. Once caramelized, season them with salt and pepper and give them a good stir.
4. Let them cook for 5 additional minutes, stirring occasionally and adding salt and pepper if needed.
5. Next, add in the remaining ghee and let cook for about 5 minutes. Don't forget to stir occasionally so it doesn't burn.
6. Add in the garlic, thyme and rosemary and cook for 10 seconds or until fragrant. 
7. Then turn the heat down to a simmer and add in the balsamic vinegar. Let this cook until the mushrooms are caramelized. 
8. Once the gnocchi is ready, add them into the balsamic skillet and give everything a good toss and let them marinate for 5-10 minutes.
9. Serve topped with crumbled goat cheese and fresh thyme or rosemary. Enjoy!
