Chocolate Chip Blondie

What You Need
1 egg
1/4 cup coconut oil, softened 
2/3 cup almond butter
2/3 cup coconut sugar
2 TSP vanilla
3/4 cup unblanched almond flour
1 TBS coconut flour
3/4 TSP baking soda
1/8 TSP salt
1/2 cup chocolate chips, this is my favorite paleo option
3 TBS chocolate chips + 1 TSP coconut oil, for topping

1. Preheat your oven to 350° and line an 8x8 pan with parchment paper and olive oil or PAM. 
2. In a mixing bowl, combine the egg, coconut oil, almond butter, coconut sugar and vanilla. It will be thick.
3. In a separate bowl, combine the almond flour, coconut flour, baking soda and salt.
4. Slowly, add the dry ingredients into the wet until fully combined. Once again, it will be very thick.
5. Stir in the chocolate chips and then spread into the pan. It will help if you use your hands.
6. Bake in the oven for 15-20 minutes or until set and the edges are starting to brown. Then, let cool completely. 
7. While the blondies are cooling, prepare the topping by melting the chocolate chips and coconut oil together. Drizzle on top and then enjoy!
