Cauliflower Fried Rice Bowl + Pork Meatballs

serves 4-6

What You Need
For The Cauliflower Fried Rice
1 medium head of cauliflower
1 TBS sesame oil
2 egg whites
1 egg
Pinch of salt
Olive oil
1/2 small onion, diced
1/2 cup frozen peas
1/2 cup carrots, diced
2 garlic cloves, minced
5 scallions, diced, whites and greens separated
3 TBS soy sauce

For The Meatballs
1 LB ground pork
1 egg
1/3 cup grated carrot
1 TSP garlic, minced
1 TSP jalapeno, minced
2 TBS cilantro, chopped
1 TBS fresh lime juice
1 TBS coconut aminos
1 TSP olive oil

For The Veggies
1 bunch bok choy, sliced thinly
1 8 oz box of mushrooms, sliced thinly
1/2 sweet onion, sliced thinly
Olive oil
Salt
Pepper

Toppings
4-6 eggs, cooked to your preference
Green onions, sliced
Sriracha
Jalapeno, sliced
Sesame seeds

Directions
For The Cauliflower Fried Rice
1. Chop cauliflower into small florets. Add in increments to food processor and pulse until cauliflower resembles rice. 
2. Whisk egg and egg whites in a small bowl and season with salt.
3. Coat large pan with olive oil and place over medium heat. Once warm, add eggs and scramble until cooked fully. Set aside.
4. Using the same pan, add the sesame oil, onion, white scallions, peas, carrots and garlic and cook until soft, about 5-8 minutes. 
5. Turn heat up to medium-high and stir in cauliflower rice. Cover and allow to cook for 5-6 minutes stirring frequently. 
6. Add eggs to rice mixture and remove from heat. Mix in green scallions. 

For The Meatballs
1. In a bowl, combine all the ingredients other than the olive oil. I find it is easier to do this using my hands.
2. Form the mixture into small/medium sized balls.
3. Heat your olive oil in a large skillet over medium heat. Once hot, add in the meatballs and cook 3-5 minutes and then flip and cook an additional 5-7 minutes or until internal temperature reaches 140°.
4. Once cooked through, set aside and keep warm.

For The Veggies
1. Preheat oven to 375°.
2. Place all veggies onto a rimmed baking sheet and toss with olive oil, salt and pepper.
3. Cook in the oven for 10-12 minutes or until all veggies are soft. Set aside and keep warm.

Assembly
1. Place your fried rice in a bowl, followed by your meatballs and veggies. 
2. Top with an egg, jalapeƱo, sliced green onions, sesame seeds and Sriracha. Enjoy!
