Caramel Soaked Walnut Brownies

makes one 9x9 pan

What You Need
For The Caramel
1 can full-fat coconut milk
1/2 cup maple syrup
Pinch of sea salt
1 TBS coconut oil, melted
2 TSP vanilla extract

For The Brownies
1/2 cup coconut flour
1/2 cup cacao powder
1/2 cup coconut oil
3 eggs
1/2 cup maple syrup
1 TSP vanilla extract
Pinch of sea salt
1/2 cup walnuts

Toppings
Chopped walnuts
Chocolate chips

Directions
For The Caramel
1. In a medium sauce pan, combine the coconut milk, maple syrup and sea salt over medium to high heat. 
2. Bring to a boil and then reduce the heat to low. Let simmer for 40-60 minutes, or until the sauce starts to thicken up. Stir occasionally.
3. Once slightly thickened, stir in the coconut oil and let simmer for 5 more minutes.
4. Remove from heat and stir in the vanilla. 
5. Pour caramel into a bowl and let it cool for 10 minutes. 

For The Brownies
1. Preheat the oven to 350° and grease a 9x9 baking dish.
2. Using a stand mixer, combine all of the above ingredients.
3. Spread out evenly into greased pan.
4. Top with 1/4 cup of caramel sauce (more if you prefer). Bake in the oven for 15-20 minutes, or until a toothpick inserted into the middle comes out clean.
5. Once cooked, remove and sprinkle with walnuts and chocolate chips. Let cool for 10 minutes and then cut and enjoy!
