Balsamic Basil Watermelon Salad

serves 2

What You Need
For The Salad
1/2 - 3/4 LB chicken strips
Salt 
Pepper
Olive oil
Italian seasoning, to taste
1 cup watermelon
1/4 cup almonds, chopped
Soft cheese (I used a soft cheese from my farmers market), broken into crumbs
1/2 cup basil, chopped
1 (5 oz) package of power greens, you won't use the whole thing

For The Dressing
1/4 cup balsamic vinegar
2 TBS olive oil
1/2 TSP dijon mustard
1/2 TSP minced garlic
1/2 TSP maple syrup
1/4 TSP salt
1/4 TSP Italian seasoning

Directions
For The Salad
1. Preheat your oven to 400°
2. Place chicken in baking dish and coat with olive oil, salt and pepper. Give it all a good toss.
3. Sprinkle with Italian seasoning and then bake in the oven for 10-15 minutes or until internal temperature reaches 160°.
4. While the chicken is cooking, cut and chop up everything.
5. Once chicken is done cooking, let cool for 5 minutes and then cut into cubes.
6. While the chicken is cooling, assemble the salad.
7. Place your lettuce on your serving plate and top with basil, watermelon, chicken, almonds and cheese crumbles.
8. Top with dressing and enjoy your healthy Summer salad!

For The Dressing
1. In a mason jar or bowl, combine all of the above ingredients. Whisk or shake so all ingredients are mixed together.
2. Save leftovers for future salads.
