New Year Reflections

Can you believe 2014 is already almost over? I can't. At the end of each year, I love reflecting on what all I've accomplished this past year, the changes, the memories, and my goals for the future. I hope this encourages you to reflect on your past year, but not too much (the past is the past for a reason), and start making steps to achieving your goals in 2015. Happy New Year everyone! 

Each day seems insignificant but when you look back, so much has changed in just one year.

It's good to celebrate your accomplishments to see how far you've come and to see what you need to work on to reach your long term goals.

Don't forget about all those memories you wish could last forever.

Lastly, here's what I want to accomplish in 2015.

Jamaica Bound

I can't believe Christmas is just a week and a half away! One of my favorite things to do around Christmas time is wrap gifts and i've been using gift tags a lot this year. TGIF! Did anyone else feel like this week dragged on? Because I sure did. But, today is a great day. My little sister is coming home from college for Christmas break, which means I get her for a whole month. Now, we can check a few more things off of our Christmas To-Do List. Tonight we're going ice skating at Atlantic Station with friends and it's going to be quite the adventure (aka i'll probably fall on my face a million times). I'll definitely need a big cup of hot cocoa after skating to warm me back up. Other than that, i'll be catching up with friends and getting some Christmas errands done. I hope you all have some exciting plans for the weekend as well!

Chicken Rollatini With Spinach Alla Parmigiana

Over the weekend, the family came over and I was in charge of planning dinner. I wanted to make something simple and easy to serve, so I decided on this chicken rollatini with spinach all parmigiana. In simpler terms, it's a mix between chicken parmesan and lasagna. This dish was absolutely amazing and a huge crowd pleaser. If you want to cut down on the prep, make the chicken the day before and keep in the fridge or weeks in advance and freeze. Plan this for your next dinner event and your guests will be ranting and raving about your amazing cooking for weeks.  

What You Need
8 thin chicken breasts 
1/2 cup whole wheat Italian bread crumbs
1/4 cup shredded parmesan cheese
6 TBS egg whites
2 cups baby spinach
6 TBS part skim ricotta cheese 
6 oz shredded skim mozzarella 
Cooking spray 
1-1 1/2 cups marinara sauce 
Salt and pepper

1. Preheat oven to 450°
2. Season chicken breasts with salt and pepper
3. Spray cooking dish with cooking spray
4. In a bowl, combine breadcrumbs and 2 TBS parmesan cheese
5. In separate bowl, combine 1/4 cup egg whites 
6. In another bowl, combine 1.5 oz mozzarella, remaining parmesan, spinach, 2 TBS egg whites, and ricotta cheese
7. Layout the chicken breasts and spread 2 TBS of the spinach, egg white, and cheese mixture on each breast
8. Next, roll each breast up and keep seam down 
9. Dip chicken roll into egg mixture, then in the breadcrumbs, and place seam down into baking dish
10. Once all chicken rolls are placed in dish, lightly spray over with cooking spray
11. Bake for 25 minutes and then remove from oven
12. Top with marinara sauce and then divide remaining mozzarella cheese and place on top of each chicken roll
13. Bake for about 3 more minutes or until cheese is melted
14. Serve extra marinara sauce and parmesan cheese on the side

Ok, so this is a month late but better late than never, right? I'm very picky when it comes to restaurants for my birthday, so I had been searching all week looking for the perfect place to celebrate with my mom and cousin. We usually split plates when we go out to eat (love having a little bit of everything), so when I saw that Saltyard had a small plates concept, I knew it would be perfect. The decor and layout of this place on it's own was amazing. They have an open kitchen, tall ceilings, and rustic with a touch of industrial decor. We were first greeted by the waitress who was very nice and knew her menu exceptionally well. First things first, we ordered a bottle of SeaGlass Pinot Noir (only $36) that was light and delicious to hold us over until we decided what to order. We finally decided to start off with the roasted red pepper bruschetta and fried okra. Both were equally amazing. Then we ordered pimento cheese beef sliders, braised pork shoulder, and grilled octopus. My favorite was the pimento cheese beef slider. The mixture of the beef and pimento cheese on the slider bread was a delicious combination. You can't go wrong with anything involving pimento cheese. I also loved the braised pork shoulder. It was juicy and amazing. The grilled octopus was good, more like a salad though, but the other two blew it out of the water. Since it was my birthday, they also surprised our table with champagne, such a sweet surprise (plus, it was very tasty)! And for desert, the waitress brought me some vanilla bean ice cream with a strawberry glaze. This was the perfect end to the meal. If anyone needs a good dinner place with an intimate atmosphere, this is your place. I will definitely be going back again sometime in the future to try more of their delicious menu items!

Hallelujah, It's Friday!

Another beautiful weekend is here and I couldn't be happier! With Christmas quickly approaching, I plan on spending my weekend crafting, baking, and doing all things cheery. I'll be out of town (vacation in the sun) the week before Christmas, so I really want to squeeze as much holiday cheer out of the next week and a half that I can. Top of my list is driving around looking at Christmas lights, watching Christmas movies around the fire, and baking Christmas goodies with the family. House Tour: Bar Cart

Hey y'all! With Thanksgiving over, it's finally getting closer to the best time of the year! I hope you all are breaking out the lights and trees and decorating with reds, greens, and lots of glitter. My Sunday was spent watching the Falcons dominate and getting the bar cart ready for the holiday season. I added some lights around the "bar" sign as well as added new festive cocktail napkins and some reindeer. Oh, and I can't forget about Rudolph who's making his debut on the sign. My Thanksgiving Menu




Gobble, gobble. Thanksgiving is finally upon us! A wonderful time filled with lots of family, drinks, and food. I love this holiday because it's a time where all my family comes together under one roof to  spend time together, socialize, and cook. This year, my family and I are heading to Charleston to spend Thanksgiving with my aunt, uncle, and cousins. I cannot wait to see everyone and explore Charleston for a few days. Since Thanksgiving requires lots of cooking and meal planning, I've decided to share my Thanksgiving dinner menu with y'all. Happy holidays!
