Shrimp With Roasted Tomatoes and Feta

First off, let me say this dish is delish! If you need a quick dinner, look no further! It is easy to put together and has only a few ingredients that aren't already lying around the kitchen. I love (can't live without) cheese so this was pure heaven with the bonus of tomatoes and shrimp. I had the dish by itself, but it would be wonderful with pasta or made into a soup for a heavier fall meal.

ALS Ice Bucket Challenge

It's all over your Facebook, Twitter, Instagram, Vine, and even news outlets. Can you guess what I'm talking about (hint: it involves really cold water, ice, and a bucket)?

You guessed it, the ALS Ice Bucket Challenge

This campaign is sweeping the nation and yesterday, my friend Emily nominated me so I decided to participate and donate to this wonderful organization. You can watch my video below:

ALS is a progressive neurodegenerative disease that affects approximately 5,600 people in the US each year (see: this campaign inspired me to do some research). In my opinion, I think this is a wonderful campaign started by Pete Frates to raise awareness and funds for ALS research (grab some tissues and watch this touching ESPN video here). ALS isn't a well known disease but because of this campaign, it is gaining awareness in the public eye and has raised over $40 million for research. The Ice Bucket Challenge has received a lot of criticism, but all publicity is good publicity, and it is just creating more awareness, so keep talking!

Avocado, Mozzarella, and Bruschetta Chicken

For dinner last night, I made the most amazing chicken topped with bruschetta, avocado, and melted mozzarella. This is a great summer dish because it's light and uses all fresh ingredients. I placed my chicken over a bed of spinach and paired it with some Kim Crawford wine to make it even more delicious. Click here to get the recipe, happy Saturday! 

Things Helping Me Get Through This Week

Since it's Wednesday (hump day!), I figured I'd share with y'all whats keeping me going this week!

1. Most importantly, coffee! I love combining Tazo's chai tea with a shot of espresso to give me that extra energy I need to power through the day. Check out this awesome link for directions to make your own iced chai latte at home! 

2. My new Kate Spade planner keeps me organized throughout the day so that I can accomplish everything on my to-do list. My life would be in shambles without it!
