Grilled Grouper From Garden & Gun Magazine

I've been dying to try out this grilled fish recipe and Labor Day weekend was the perfect opportunity. This is a great dish after a busy day out on the lake or on the beach because you can just throw it on the grill and then voilĂ , it's ready! 

What You Need:
2 large Vidalia onions, cut into 1-inch slices
1/4 cup olive oil
1 TBS kosher salt
2 1/2 TSP black pepper
4 large, heirloom tomatoes, cut into 1-inch slices
4 avocados, cut into 1/2-inch slices
2/3 cup basil leaves
1 cup lime juice
1 cup EVOO
6 (6 oz.) grouper fillets
Arugula for topping

1. Heat grill to 400°F-450°F
2.Place onions on baking sheet, brush with EVOO and season with salt and pepper
3. Grill onions 4-5 minutes on each side
4. Place in bowl and add tomatoes and avocado
5. In separate bowl, whisk together lime juice, EVOO and basil
6. Toss liquid mixture with onion, tomato and avocado mixture and let marinate
7. Season fish with salt and pepper and place on grill for 6-7 minutes
8. Flip fish over and cook an additional 4-5 minutes
9. Evenly arrange plates with the onion, tomato and avocado mixture and top with fish
10. Top with arugula and enjoy!
