Southern Staple: Shrimp and Grits

Being from the south, I have always had a major love affair with shrimp and grits. Since I'm also a cheese fanatic, my grits always consist of an unhealthy amount of cheese. Being topped with bacon and parsley, this dish is absolutely amazing for all times of the year and is a must try for everyone. 

What You Need
4 cups H2O
Salt & pepper
1 cup grits
3 TBS butter
2 cups cheddar cheese
1 lb shrimp, peeled & deveined 
6 slices of bacon, crumbled
4 TSP lemon juice
2 TBS chopped parsley
1 cup scallions, thinly sliced
1 garlic clove

1. Bring H2O to boil and add salt and pepper
2. Add grits and cook for 20-25 minutes, until thick
3. Remove grits from heat, add butter and cheese
4. Fry bacon in large skillet and transfer to paper towel once cooked
5. In bacon grease, add shrimp and cook until pink
6. Then add lemon juice, bacon, parsley, scallions, and garlic and saut√© for 3 minutes
7. Spoon grits into desired dish and top with shrimp mixture
8. Enjoy!
