Taco Skillet

Mexican. One pan. Avocado. All these items + easy clean up make this dish beyond amazing. Did I mention it only uses one pan? One pan! That means you can spend all your normal cleaning time doing more enjoyable things (like drink wine and watch your favorite tv shows).  Also, with temperatures starting to drop, this hearty meal will keep you full for hours. 

What You Need
1 can black beans, rinsed and drained
1 can yellow corn, drained
1 bell pepper, diced
1 tomato, diced
1 cup ground turkey, already cooked
3/4 cup salsa
1 can tomato sauce
1 TSP garlic
Avocado for topping, diced
Cilantro for topping, chopped
Cheddar cheese for topping, shredded

1. Cook ground turkey in skillet until no longer pink
2. Combine black beans, corn, bell pepper, tomato, and garlic into the same skillet and heat over medium heat for 3-5 minutes
3. Add salsa and tomato sauce and continue to cook for 15 minutes over medium heat
4. Place in desired bowls and top with avocado, cilantro, and cheese
5. Enjoy!
