Greek Yogurt & Applesauce Blueberry Muffins

(Makes about 16)

What You Need
2 1/2 cups flour
1 TBS baking powder
1/2 TSP salt
16 oz blueberries
1 egg
1 egg yolk
1 cup sugar
1/2 cup plain, nonfat greek yogurt
1/3 cup sugar free applesauce
6 TBS unsalted butter, melted
Sugar for sprinkling

1. Preheat oven to 425º and place liners in muffin pan
2. Place flour, baking powder, & salt in a large bowl and whisk together
3. Fold in the blueberries and set aside
4. Place egg, egg yolk, sugar, greek yogurt, & apple sauce into a smaller bowl and whisk until combined
5. Melt butter and whisk into the liquid bowl, 2 TBS at a time
6. Fold half of the liquid mixture into the dry mixture until mostly combined
7. Fold in the remaining liquid mixture until completely combined, it will be thick but don't worry
8. Scoop 1/4 cup of dough into each liner & sprinkle each with sugar 
9. Bake at 425º for 5 minutes & then lower oven to 350º and bake for 25 minutes, or until toothpick inserted in center comes out clean
10. Let muffins cool and then enjoy!
