Top Amazon Prime Gifts

Banana Pancakes

serves 4

What You Need
1 1/4 cups almond flour
1/4 cup coconut flour
1/2 TSP baking soda
1/4 TSP sea salt
1 cup coconut milk
1 banana, ripe & mashed
3 eggs
1 TSP vanilla extract
Coconut oil, for frying

Directions
1. Combine all the dry ingredients into a bowl.
2. In a separate, larger bowl, mash the banana and add the remaining wet ingredients, except the coconut oil. Whisk together. 
3. Add the dry ingredients into the wet ingredients and mix until combined. 
4. Preheat a pan over medium heat and coat with coconut oil.
5. Once pan is hot enough, add about 2 TBS of dough for each pancake. Cook each side about 2-3 minutes or until fully cooked through.
6. Top with desired toppings and enjoy!

Happy Saturday! Sorry for being MIA the past two days, I've been running around like crazy getting everything ready for the holidays. I hope you all had a merry Christmas with your family and friends! I had an absolutely amazing time. Now I'm off the Roatan for a week for some R&R. Happy Friday!! This work week has been super hectic, but now, I am happy to relax and enjoy my next two days off. Over at my house, I am in full holiday mode and cannot wait for Christmas next week! This weekend, the family and I will be finalizing all our Christmas festivities for Christmas Eve dinner. Get ready for lots of recipes! Tidbit Tuesday: Christmas Wrapping Ideas

Christmas Sugar Cookies

What You Need
2 sticks butter, softened
2 cups sugar
2 eggs
3 TSP vanilla
1 cup plain greek yogurt
1 TSP salt
2 TSP baking soda
5 1/2 cups flour

Directions
1. Preheat oven to 375°
2. Using a stand mixer, combine the butter and sugar until fully incorporated. Next add greek yogurt. 
3. In a separate bowl, whisk together the flour, salt, and baking soda. Add to wet mixture and stir until combined.
4. Roll out the dough on a floured surface. Keep the dough at about 1/4 to 1/3 inch thick.
5. Use preferred cookie cutters and cut out your favorite shapes. 
6. Line a baking sheet with parchment paper and spray with Pam. Transfer cut out cookies onto tray.
7. Bake cookies for 7-8 minutes and then remove. Do not let them keep cooking or they will get too crispy. Let cookies cool for 5 minutes and then transfer to cooling rack. Make sure to transfer them or they will get too soggy. 
8. Once completely cooled, decorate your cookies with icing, sprinkles, and other toppings. Enjoy!

Wish List Wednesday: Gift Edition Siblings

DIY Christmas Card Holder

Christmas is less than 20 days away...wow! Where did the time go?! Since Thanksgiving, I have been pulling out all the Christmas decorations to get the house ready for the holiday season (no shame). While going through everything, I realized that I needed something to hold my Christmas Cards. I took to Pinterest and found the perfect thing, a wood holiday card display that is super easy to make and can still be used year round. All you need to do is change out the wreath and put up other pictures or save the dates. If you're still looking for something to display all your cards on, this project is simple and inexpensive. It can even be done in one day...now get to crafting! 

What You Need
2- 42" 1 x 2's
2- 24" 1 x 2's
4- 1 1/2" flat corner brace
Chicken wire
Staple gun
Wood stain (I use Minwax)
Old cloth
Screw driver
Sawtooth hangers
Wire cutters
Paint brush
Hammer

Directions 
1. First, we are going to stain the wood. Spread out a trash bag or newspaper and then place the wood on top. Make sure you have the stain, a paint brush, and an old cloth. Paint one side of each piece of wood and then wipe off the access stain with the old cloth. Let dry for 5-10 minutes and then repeat with remaining sides. 

2. Once the stain has dried and set in, we are going to attach the panels together with the corner braces using a screw driver. Make sure the panels are securely attached.

3. Next, lay out the chicken wire to fit your frame. 

4. Cut both ends of the excess chicken wire. Make sure not to over cut, you can always trim a little after you staple it to the wood. 

5. Now, get out your staple gun and staple the chicken wire onto the wood. Make sure to push down with force so that the staple is securely in there. Also, keep the wire tight so that there are no lose spots.

6. Lastly, hammer the sawtooth hangers to the back of the frame. 

7. Add your favorite wreath and Christmas cards and you are all done!

Buffalo Chicken Casserole

{serves 6-8}

What You Need
1 head of cauliflower, grated
6 eggs
1 lb of chicken, cooked and shredded
1/2 onion, diced
1 green bell pepper, diced
1 TSP garlic powder
1 TSP sea salt
1 TSP paprika
1/2 cup buffalo sauce

Toppings (optional)
Avocado
Tomatoes
Bacon
Blue cheese
Extra buffalo sauce
Ranch dressing

Directions
1. Preheat the oven to 400° and grease a casserole dish.
2. In a large bowl, combine the grated cauliflower and eggs. Mix well. 
3. Stir in the remaining ingredients (not the toppings), and pour into the greased casserole dish.
4. Bake for 50-60 minutes or until the top is slightly brown. 
5. Top with your desired toppings and enjoy!

Friday, Friday, gotta get down on Friday! - thanks Rebecca Black for that wonderful ballad, because that is what the weekend is all about...and boy, am I so happy it is finally Friday. With last week being such a short week, this week has seemed extremely long (anyone else feel me?). I was already counting down the days to Friday on Monday. This weekend I plan on getting things done around the house and prepping for the holidays. So much to do and so little time! But nonetheless, I plan on having a good time while doing it. I hope you all have some fun plans ahead!
