Shrimp With Cauliflower Fried Rice

{Serves 4}

What You Need
{For The Shrimp}
4 TBS water
2 TBS ketchup
1 TBS soy sauce
2 TSP cornstarch
1 TSP honey
1/2 TSP crushed red pepper
1/4 TSP ground ginger
1 TBS olive oil
1/4 cup green onions, sliced
4 garlic cloves, minced
12 oz. cooked shrimp, devained and tails off

{For the Cauliflower Fried Rice}
1 medium head of cauliflower
1 TBS sesame oil
2 egg whites
1 egg
Pinch of salt
Cooking spray
1/2 small onion, diced
1/2 cup frozen peas
1/2 cup carrots, diced
2 garlic cloves, minced
5 scallions, diced, whites and greens separated
3 TBS soy sauce

{For The Shrimp}
1. In a medium-large bowl, stir together water, ketchup, soy sauce, corn starch, honey, crushed red pepper, and ground ginger.
2. Heat olive oil in a large skillet over medium heat. Once hot, stir in green onions and garlic cloves and cook for 30 seconds. 
3. Add shrimp and coat with oil in pan. Once shrimp are coated, add in sauce and stir. Continue to cook until sauce has thickened and becomes bubbly. 
4. Keep warm.

{For the Cauliflower Fried Rice}
1. Chop cauliflower into small florets. Add in increments to food processor and pulse until cauliflower resembles rice. 
2. Whisk egg and egg whites in a small bowl and season with salt.
3. Coat large sauce pan with cooking oil and place over medium heat. Once warm, add eggs and cook fully. Set aside.
4. Using the same pan, add the sesame oil, onion, white scallions, peas, carrots, and garlic and cook until soft, about 5-8 minutes. 
5. Turn heat up to medium-high and stir in cauliflower rice. Cover and allow to cook for 5-6 minutes stirring frequently. 
6. Add eggs to rice mixture and remove from heat. Mix in green scallions. 

{To Assemble}
Place rice in bowl and top with desired amount of shrimp. Top with extra green scallions and serve with extra soy sauce on the side.
