Happy Friday! Today I am headed back from an amazing week at the beach..super sad. On the plus side, I get to pick up my baby Gracie and Summer from doggy day care today. I have missed them oh so much! I'm looking forward to spending the weekend with my sister and friends before she heads back to school. What all do you have planned? I hope it's something fun!

Top Bathing Suits Under $50

It's summer time and that means time to get some new bathing suits to soak up the sun in style. Here are my favorite bathing suits that won't break the bank!

Scallop Bikini - $42.00

Acai Bowl Topped With Fresh Fruit & Granola

{serves 1}

What You Need
For The Acai Bowl
2 cups frozen strawberries
2 frozen bananas, sliced
4 TBS acai powder
1 cup unsweetend almond milk, or other milk of choice
2 TBS almond butter
1 TBS honey

For The Toppings
Fresh fruit (bananas, raspberries, strawberries, blackberries, etc.)
Additional honey
Unsweetened coconut flakes
Chia seeds

For The Acai Bowl
1. Add frozen fruit, acai powder, almond milk, honey, and almond butter to blender. Blend until creamy and smooth. If mixture isn't creamy enough (should be a little thicker than a smoothie), add more almond milk. 

1. Spoon mixture into bowl and top with desired toppings.
2. Enjoy this amazing start to your day!

Long Weekend Ahead!

Happy Friday! It has been a busy, non-stop week for me and I can't wait to relax during this long weekend. Since it is Memorial Day weekend, I plan on doing all things go to a baseball game, drink beer, and grill out with family. So original, I know! I hope you all had a wonderful weekend and an even better weekend ahead. Happy Memorial Day weekend!

Top Memorial Day Dishes

Lemon Pepper Chicken + Artichoke Caper Salsa

{serves 4}

What You Need
For The Chicken
4 chicken breasts 
Lemon pepper seasoning
1 bunch of asparagus, ends trimmed off
Garlic salt
1/4 cup feta cheese, crumbled (for topping)
1 tomato, diced (for topping)

For The Artichoke Salsa
1 can quartered artichokes, drained and chopped
2 TBS capers, drained
1/4 red onion, diced
juice of lemon
2 TBS Italian salad dressing
1 glove garlic, minced
1/2 TSP oregano
1/4 TSP thyme
Salt & pepper

For The Chicken
1. Preheat oven to 425° and line baking sheet with foil. Spray with non-stick cooking spray. 
2. Place asparagus in bowl and toss with desired amount of olive oil, garlic salt, and pepper. 
3. Place asparagus on tray and spread out so they aren't touching. Bake for 10 minutes.
4. While the asparagus is cooking, season both sides of chicken with lemon pepper seasoning. 
5. Heat some olive oil in a large skillet over medium heat. Add chicken and cook until no longer pink. 

For The Artichoke Salsa
1. Add all ingredients to bowl and mix well. 

For Assembly
1. Place asparagus on plate. 
2. Top with chicken.
3. Top chicken with artichoke salsa.
4. Sprinkle 1 TBS feta and 1/4 of tomato on very top. 
5. Enjoy!

Happy Friday y'all! I am headed back to Atlanta after a fun, but exhausting work week in Vegas. I cannot wait to go home and see little Gracie and celebrate my mom's birthday. It will be a great relaxing weekend! I hope you all have fun plans for the weekend!
