Tidbit Tuesday: Top 4th of July Recipes

Shrimp & Cauliflower Grits

{serves 3-4}

What You Need
For The Shrimp
15 raw shrimp, peeled and deveined 
3 TBS EVOO
6 garlic cloves, minced
Zest of one lemon
2 TSP dried oregano, divided 
2 pieces of bacon, crumbled up
1/2 large sweet onion, diced
2 TBS butter, or fat of choice
1 TBS white wine vinegar
1 TSP red pepper flakes
1 TBS lemon juice
1 TBS fresh oregano, chopped
Salt and pepper, to taste

For The Grits
1 head of cauliflower, chopped
1/4 cup almond milk, or milk of choice
4 garlic cloves, minced
1 TBS butter, or fat of choice
1/4 TSP cayenne pepper
Salt and pepper, to taste

Directions
For The Shrimp
1. In a medium bowl, mix together the EVOO, 2 garlic cloves, lemon zest, and 1 TSP dried oregano. Place shrimp in bowl and marinate over night. 
Next day
2. Cook bacon over medium-high heat. Let cool and then crumble into small pieces. Set aside.
3. Keep remaining bacon fat in pan. Add butter to the pan and stir until melted. Add the onion and sauté until translucent, 5-6 minutes. 
4. Add 4 garlic cloves, 1 TSP dried oregano, and red pepper flakes. Continuously stir for 1-2 minutes.
5. Add white wine vinegar and then shrimp, including marinade. Cook for 3-4 minutes or until shrimp is cooked through. Remove from heat and stir in lemon juice. 
6. Season with salt and pepper. 

For The Grits
1. Place cauliflower pieces in a large pot and cover with water. Bring to boil over high heat. 
2. Reduce to medium-low and cover. Let cook for 5-7 minutes or until tender and then drain.
3. Place cooked cauliflower in a food processor. Add milk, butter, and garlic to food processor. Pulse until the mixture resembles grits. 
4. Season with salt and pepper. 

Assembly
1. Place "grits" on serving dish.
2. Top with shrimp.
3. Top with sauce from shrimp pan.
4. Garnish with bacon and fresh oregano. 
5. Enjoy!!

We have made it to another beautiful Friday everyone! Today, i'm having some major #TGIF because this week seemed excruciatingly long. I'm so happy it's the weekend and that the weather is suppose to be nice here in Atlanta, well, other than Saturday. I leave for Oregon next week, so i'm happy to relax and get things done around the house this weekend. I hope y'all have an amazing weekend ahead!

Homemade Marinara + Zoodles + Pesto Meatballs

{serves 6}

What You Need
For The Zoodles
8 large zucchini 
Sea salt

For The Marinara Sauce
1 1/2 TBS olive oil
1 medium onion, diced
1 cup carrots, diced
1 cup celery, diced
1 red bell pepper, diced
10 oz. mushrooms, diced
4 garlic cloves, minced
3 28 oz. cans of whole peeled tomatoes 
Salt and pepper to taste

For The Meatballs
2 lbs ground turkey 
1/2 cup almond flour
1/2 cup pesto
2 egg whites
1/2 TSP salt
1/4 TSP ground pepper

Directions
For The Zoodles
1. Preheat oven to 200°
2. Spiralize zucchini using tool of choice.
3. Line a baking sheet with paper towels and place zucchini noodles on top and sprinkle with sea salt. 
4. Cook the zoodles for 30 minutes and then squeeze the zoodles with the paper towels to remove all water. Set aside or keep on warm in the oven until ready to serve.

For The Marinara Sauce
1. Heat oil in a large, deep pan over medium heat.
2. Add onions, celery, carrots, bell pepper, mushroom, and garlic. Sauté until onions are softened, 3-4 minutes. 
3. Add tomatoes and bring sauce to boil. Once boiling, reduce heat to low and simmer for 40 minutes or until vegetables are soft. 
4. Remove from heat and place sauce in food processor and pulse until smooth. 
5. Season with salt and pepper.
6. Return sauce to pan and simmer until ready to serve. 

For The Meatballs
1. Preheat the oven to 375°
2. Line a baking sheet with aluminum foil and place wire racks on top of the baking sheet. 
3. Spray the wire racks with cooking spray and set aside.
4. In a large bowl, mix together all of the ingredients. 
5. Roll into small balls and place on wire rack.
6. Bake for 20-25 minutes or until fully cooked. 

For Assembly
Place zoodles on serving dish and top with marinara sauce. Place desired number of meatballs on top and garnish with basil and parmesan. Enjoy!

Father's Day is right around the corner and if you haven't made/bought a gift yet, I am here to help! I have put together my favorite DIY Father's Day gifts perfect for any dad because let's face it, all parents love hand-made gifts! 











Sweet Potato, Kale, & Shrimp Skillet

{serves 2}

What You Need
2 cups shrimp, peeled & deveined 
2 TBS olive oil
1/2 cup diced onion
2 garlic cloves, minced
2 cups diced sweet potato
3 cups kale 
Black pepper & salt
1/2 TSP red pepper flakes

Spice Mixture
1/2 TSP cumin
1/2 TSP paprika
1/2 TSP onion powder
1/4 TSP cayenne pepper

Directions
1. Combine spice mixture and set aside.
2. Heat olive oil in large sauce pan over medium heat. Sauté onion and red pepper flakes until they are translucent. 
3. Add garlic and cook for 30 more seconds.
4. Add sweet potato and cook until soft (15-20 min). 
5. Add shrimp and sprinkle with spice mixture. Cook for 3-5 minutes or until cooked through.
6. Turn heat down to low and add kale. Cook until slightly wilted.
7. Season with salt & pepper. Enjoy! 

The Weekend Is Ahead!

Whew...we've almost made it! Saturday and Sunday are just right around the corner and I cannot wait. This week, luckily, wasn't too busy for me but i'm ready to relax. It's suppose to be a beautiful weekend here in Atlanta so i'll probably spend most of it outside. I hope you all had a wonderful week, see you Monday!
