Zucchini Noodles With Cod & Bacon

{serves 4}

What You Need
1 lb cod, cleaned and rinsed
6 slices bacon
8 medium zucchini
2 TSP garlic powder
6 green onions, chopped and separated by white & green
Juice of 1/2 lemon
2 cups spinach
1 tomato, diced
Sea salt & pepper

1. Cook bacon in pan on stove until crispy. Crumble bacon and set aside. Leave a little fat in pan to keep coated and save the rest. Set pan aside to be used later. 
2. Spiralize zucchini using a spiralizer or julienne peeler. Set aside.
3. In high sided pan, heat 2 TSP bacon fat over medium heat. Add the zucchini noodles, spinach, and garlic powder. Season with salt and pepper. Cook for 3-5 minutes or until softened.
4. Once noodles are cooked, remove from heat and toss with 2/3 of the bacon, white green onion pieces, and lemon juice. Set aside.
5. Heat pan containing bacon fat over medium heat. Add fish and cook for 3 minutes on each side. Once cooked, remove from heat.
6. Place noodles on plate and top with fish. Garnish with green onion pieces, remaining bacon, and tomato. 
7. Enjoy!
