Loaded Carnitas Fries

Serves 4

What You Need
For Cranitas
1 lb pork butt
Garlic salt 
Ancho chili powder
Sea salt
Chicken stock
Hot sauce

For Loaded Fries
2 medium sweet potatoes
Tapioca starch (or cornstarch)
1/2 TSP paprika
1/2 TSP salt
1/2 TSP garlic powder
2 TBS olive oil

Additional Toppings
Sour Cream

For Carnitas
1. Season pork on all sides with spices. Make sure to really rub them in to incorporate all the flavors. Place in crockpot.
2. Pour chicken stock around the meat until there is about 1.5" of liquid. 
3. Sprinkle your desired amount of hot sauce over the pork.
4. Cover and cook on low for 8-10 hours.
5. Remove from crockpot and pull apart meat. Let cool.
*Bonus: you will have a lot of leftovers for the week!*

For Loaded Fries
1. Preheat oven to 450° and line a rimmed baking sheet with parchment paper.
2. Cut sweet potatoes in half and then continue cutting in half until you get french fry like shapes. 
3. Place sweet potatoes into a zip lock bag and sprinkle with tapioca starch/cornstarch and shake until they are lightly covered.
4. Spread fries out onto baking sheet, leaving some room between them and brush with olive oil.
5. Mix spices in bowl and sprinkle over fries.
6. Bake for 25 minutes, flipping halfway through. 

For Assembly
1. Place fries on plate and top with carnitas. 
2. Add any additional toppings and enjoy!
