Starting The Weekend Early!

Lucky me, I get to start my weekend a day early this week! Today I am headed down to Saint Simons for the annual Georgia/Florida weekend. Hopefully the Dawgs can pull through and bring home a W this year. Either way, this weekend is always such a fun time, from Frat beach to the game, it is always full of great memories! Tidbit Tuesday: Last Minute DIY Halloween Outfits

Halloween is this weekend and if you don't know what you're going to be, then you are in trouble! But not to worry, I have put together some of my favorite last minute DIY Halloween costumes to get you in the spirit. I hope these help you find the perfect outfit!



Thai Chicken Zoodles

serves 4

What You Need
For The Zoodle & Chicken Dish
4 TBS oil divided (grapes, olive, etc.)
1 LB chicken breasts, sliced into strips
2 zucchini, spiralized
1 large carrot, spiralized
1 red pepper, sliced into small strips
1/4 cup cilantro, diced
1/4 cup green onion, diced
Sesame seeds

For The Sauce
1 garlic clove, minced
4 TBS almond butter
Juice of 1 lime
3 TBS coconut aminos
2 TBS cilantro, diced
1/2 TSP fresh ginger, ground
1/4 TSP red pepper flakes

Directions
For The Sauce
1. In a small bowl, whisk together the garlic, almond butter, lime juice, coconut aminos, cilantro, ginger, and red pepper flakes. Set aside.

For The Zoodle & Chicken Dish
1. Heat 2 TBS oil in a skillet over medium to high heat. Add chicken strips once hot. Sauté for 3-4 for minutes on each side, or until cooked through. Once cooked, set aside until cooled and then cut into tiny pieces.
2. Using the same skillet, heat remaining 2 TBS of oil in skillet. Add zucchini and carrot noodles. Cook for 2 minutes, stirring constantly. 
3. Place noodles, chicken, red pepper, cilantro, and green onions into a large bowl. Pour almond butter sauce on top and toss to make sure everything is coated. 
4. Garnish with sesame seeds and serve. Enjoy! 

Another Beautiful Fall Weekend!

Wahoo...we made it to another Friday! This week wasn't too stressful of a week for me, so I am very thankful. Gracie did get shaved though, and that has been an adjustment. She isn't use to all this air and has been running around like crazy. She looks like a little naked mole rat, but trust me, it grows on you! This weekend, I am headed up to the lake with the family to do all things Fall. Some of the top contenders at this point are apple picking, going to a pumpkin patch, and doing a corn maze. Then we will end it with pumpkin carving, cider, and s'mores around a fire. What an amazing weekend! I hope you all plan on enjoying this beautiful Fall weather this weekend!

Tidbit Tuesday: My Favorite At Home Workouts

We're all so busy and don't always have time to go to the gym, so i've put together my favorite at home workouts. Hopefully this will help motivate you to get moving!

1. Every single Blogilates video on Youtube. This is my number one at home workout source. Cassey Ho is really inspirational and keeps her videos interesting and fun! If you want to workout at home, you need to subscribe to her YouTube channel now. 

2. Tone It Up's butt workout will help you get that big booty you've been wanting. Just do it a couple of times a week and watch it do wonders.

3. If you have a set of stairs nearby, this at home cardio and muscle build is a great workout. You will be exhausted but feeling great!

4. I love this quick and easy 21 day arm sculpting challenge. Just set aside 20 minutes at the most for this great arm workout. 

5. This ab workout may seem simple, but it will leave you sore the next morning. 

Now get out there and kick some butt!

Halibut Steaks w/ Roasted Tomatoes & Asparagus

{serves 2}

Happy Monday! Today, i've got y'all a delicous and super easy seafood dish. Just stick everything in the pan and pop it in the oven...it's as simple as that. I hope y'all enjoy! 

What You Need
2 halibut steaks
Olive oil
Salt
Pepper
2 TBS ghee or butter, melted
1/2 TSP black peppercorns
2 large tomatoes, thinly sliced
1 bunch of asparagus, bottoms removed
1/4 cup basil leaves

Directions
1. Preheat the oven to 400°.
2. Rense fish and pat dry with paper towel.
3. Brush fish with melted butter and sprinkle peppercorn on. Press peppercorn into fish to make sure it stays attached. Set aside.
4. Cover the bottom of your baking dish with some olive oil. Lay the tomato slices on the bottom of your dish, trying not to overlap them. 
5. Next, place the basil leaves on top of the tomatoes and then top with the fish.
6. Place the asparagus around the fish and drizzle with olive oil and sprinkle with salt and pepper. 
7. Place in oven and cook for 10-15 minutes or until flakey.
8. Enjoy!

Weekend Time!

And a wonderful Friday it is! This has been a travel filled week, and today's no different. Except today I am traveling for fun rather than work. Today, I am headed down to Statesboro, Georgia to see my little sister become an official nursing student. I am just so proud of her and can't wait to see all she accomplishes! This weekend it is suppose to be cooling off, so I plan on heading outside and enjoying it. A fire in the chiminea is definitely happening, smores may or may not be involved. I hope you all have fun plans for the weekend ahead!

Tidbit Tuesday: Adam Lippes for Target


Two of my favorite things have finally come together to make the best collaboration I've ever seen, plaid + Target! Adam Lippes has created this marvelous collection for Target and he definitely delivered with some great products. I already have an obsession with plaid shirts, but now it will move into accessories, home goods, and much more. Check out some of my favorite pieces from his collection!

Zucchini & Carrot Frittata


What You Need
2 cups spiralized zucchini
1 TSP sea salt
2 cups spiralized carrots
1/2 cup crumbled bacon
9 eggs
4 TBS fresh rosemary, chopped
4 TBS fresh chives, chopped
1 TBS olive oil

Directions
1. Preheat the oven to 375° and oil a pie plate with 1 TBS olive oil. Set aside.
2. Spiralize the zucchini and place in a bowl. Toss with salt and set aside.
3. Cook the bacon and let cool on a paper towel. Once completely cool, crumble bacon into small pieces and set aside.
4. Spiralize the carrots and set aside. 
5. Whisk the eggs together into a large bowl.
6. Using paper towels, squeeze as much water out of the zucchini that you can and add to the bowl.
7. Add the carrots, bacon, and spices and stir until combined.
8. Pour mixture into pie plate and cook in the oven for 45 minutes, or until cooked in the center.
9. Enjoy!

Weekend Ready

Friday is finally upon us and I couldn't be happier! And my sisters coming into town, so this is going to be an extra great weekend. Hopefully, we'll get around to pumpkin decorating and other fall activities to get in the Halloween spirit. I hope you all have a wonderful weekend ahead!

Tidbit Tuesday: Pumpkin Decorating Ideas

To-Go Oatmeal Muffins

Happy rainy Monday, everyone! I hope you all grabbed breakfast this morning, because this is going to make you hungry if you didn't. These to-go oatmeal muffins are delish and super simple. They are great for busy mornings when you don't have more than 15 seconds to grab breakfast. You can eat these at room temperature or, if you want to get crazy, pop them in the microwave for 15 seconds. It will be like they just came out of the oven! 

What You Need
2 eggs
1/4 cup olive oil
1 cup brown sugar
1/2 cup mashed banana
1 1/2 cups almond milk (or milk of choice)
2 TSP vanilla
1/2 TSP salt
1 TBS cinnamon
3 cups oats
2 TSP baking powder
Toppings: chocolate chips, nuts, coconut, dried fruit, etc.

Directions
1. Preheat the oven to 350° and grease or line muffin pan with liners.
2. In large bowl, whisk eggs, brown sugar, and oil until combined. 
3. Add in the banana, milk, vanilla, salt, and cinnamon and whisk until combined.
4. Stir in the baking powder and oats.
5. Scoop mixture into muffin pan, filling them 1/2 way. 
6. Top with desired toppings and push them into batter.
7. Bake for 30 minutes and then let cool. Enjoy!

Store in airtight container for 5 days or freeze

Rainy Weekend Ahead

Rainy weekend ahead, but hey...at least it's the weekend! My week has been pretty busy, so I'm counting down the hours until the weekend starts (PS it's only ___ hours until 5 o'clock). Since i've been so busy lately and this weather is les mis, I plan on spending my weekend lounging and staying out of the rain. I see a lot of Netflix in my future and I am not sad about it one bit. I hope you all have fun things planned for this weekend!
