Banana Pancakes

serves 4

What You Need
1 1/4 cups almond flour
1/4 cup coconut flour
1/2 TSP baking soda
1/4 TSP sea salt
1 cup coconut milk
1 banana, ripe & mashed
3 eggs
1 TSP vanilla extract
Coconut oil, for frying

1. Combine all the dry ingredients into a bowl.
2. In a separate, larger bowl, mash the banana and add the remaining wet ingredients, except the coconut oil. Whisk together. 
3. Add the dry ingredients into the wet ingredients and mix until combined. 
4. Preheat a pan over medium heat and coat with coconut oil.
5. Once pan is hot enough, add about 2 TBS of dough for each pancake. Cook each side about 2-3 minutes or until fully cooked through.
6. Top with desired toppings and enjoy!
