Goodbye 2016, Hello 2017!

Wow, it's finally time to say goodbye to 2016 and hello to a new year! For me, this past year was filled with changes, adventures, and memories that I will never forget. I am beyond thankful for all the people that were brought into my life this past year and all the friendships that grew even stronger. I am also very #blessed to have a place that Gracie and I can call our very own (love ya Mom, mean it!). This New Year's Eve, I will be ringing in 2017 with some of my closet friends here in Atlanta. The crowns and party blowers have already been bought! Be sure to follow along on my Snapchat (smwrightt) for all the fun. I wish you all a happy new year, see ya in 2017!

My 2017 New Years Resolutions

Wow, 2017 is almost here! I hope you all have found some time to reflect on the past year and what you want to accomplish in the one ahead. For me, 2016 was filled with a lot of wonderful changes, so I cannot wait to see what 2017 holds. To get myself ready for the new year, I have come up with some resolutions that will help make 2017 better than ever. I hope these give y'all some inspiration for your own resolutions! 

1. Eat more clean foods and less sweets
2. Run outside more
3. Sit less during the work day
4. Buy less stuff
5. Have more patience
6. Save more money
7. Make new friends in Atlanta
8. Drink less wine and more water
9. Start tackling my hardest task of the day first
10. Become a morning workout person
11. Read more books
12. Become more confident in myself
13. Take more risks

16. Journal more

Peppermint Bark Blondies

Makes 10-12 slices

I am so sad Christmas is over! You're telling me that I have to wait another 363 days until I get to celebrate all over again?! Major bummer...but nonetheless I had such a great time celebrating this year with family and friends! We hosted Christmas Eve dinner at our house for the second time in a row and it was an absolute blast! 

We did a gift exchange (that got pretty brutal), had some amazing food, and got to spend some quality time with one another. It was another great Christmas for the books! I hope you all had a very Merry Christmas and a Happy Holidays! Now onto the drool worthy peppermint bark blondies...

What You Need
1 stick of butter, softened
3/4 cup brown sugar
1/4 cup white sugar
1 egg, at room temperature
1 1/4 cup flour
3/4 TSP baking powder
1/4 TSP salt
1 TSP vanilla extract
1/8 TSP nutmeg
Pinch of ginger
Pinch of white pepper
1/2 cup white chocolate chips
8 oz peppermink bark, broken up
2 candy canes, crushed

Directions
1. Preheat the oven to 350° and grease an 8x8 (give or take) baking dish.
2. Using a stand or hand mixer, cream together the butter, brown sugar, and white sugar until fluffy. Next add the egg and vanilla extract. 
3. In a medium sized bowl, combine the flour, baking powder, salt, nutmeg, ginger, and white pepper. 
4. Slowly, add the dry ingredients to the wet until fully combined and then fold in the white chocolate chips.
5. Transfer the dough into the prepared baking dish. Bake in the oven for 30-35 minutes or until a toothpick inserted into the middle comes out clean. 
6. While still warm, top with peppermint bark and fresh candy canes. Let melt and then place in freezer for 5-10 minutes to set. Enjoy all the chocolatey goodness! 

Christmas Weekend!

Christmas Eve is only a day away! Can you believe it?! I've got family coming in town today, so the festivities are about to kick off! Even though i've still got some wrapping to do, a cake to bake, and a table to decorate, I am so excited to get everyone together for my favorite time of the year! Tomorrow it all starts, with church and then Christmas Eve dinner. Then on Christmas day, we meet up with my Dad for some tasty Japanese food. I just love family Christmas traditions!

Christmas Menu

Ground Beef Squash Nachos

serves 4

What You Need
6 squash or zucchini
1 lb ground beef
2 TBS taco seasoning, divided
1 1/2 peppers (any color), diced
1/2 onion, diced
Salt
Pepper
Olive oil

Toppings
Avocado
Salsa
Cheddar cheese
Cilantro

Directions
1. Preheat oven to 400° and line a rimmed baking sheet with parchment paper.
2. Slice squash or zucchini into thin slices, about 1/4 inch thick. 
3. Brush slices with olive oil and then drizzle with 1/2 TBS taco seasoning, salt, and pepper.
4. Cook in oven for 15-20 minutes, broiling them for about a minute at the end if they aren't crispy enough. 
5. While squash or zucchini is cooking, heat 1 TBS olive oil in a pan over medium heat. Once warm, add in diced pepper and onion. Cook for 5-8 minutes or until soft.
6. Add in ground beef and 1 1/2 TBS taco seasoning. Break beef up as it cooks and cook until no longer pink, about 8-10 minutes. 
7. Once everything is cooked, place squash on plate and top with ground beef mixture and desired toppings. Enjoy!!

The Weekend is Finally Here!

Hello Friday!! Can you believe that Christmas is next weekend?! I mean seriously, where did the time go?? My to do list is never ending. I still need to go gift shopping, decide recipes for Christmas Eve dinner, and just enjoy Christmas time (ex: drive around and look at lights, bake cookies, sing endless amounts of Justin Bieber Christmas songs, etc.). My weekend ahead will be filled with all of the above, plus some time spent catching up with friends! I hope you all have a wonderful weekend ahead, see ya Monday!!

Turkey Sweet Potato Sliders w/ Maple Chipotle Ketchup

Makes 10 sliders

What You Need
Sliders
1 large sweet potato
2 TBS olive oil
Sea salt
5 slices bacon
1 lb ground turkey
2 TBS taco seasoning
Green onions

Maple Chipotle Ketchup
6 oz tomato paste
2 TBS maple syrup
2 TBS apple cider vinegar
1 TSP paprika
1/2 TSP salt
1/4 TSP chipotle chile seasoning 

Directions
Sliders
1. Preheat the oven to 425° and line a rimmed baking sheet with parchment paper.
2. Using a mandolin slicer (or knife if you don't have one), thinly slice the sweet potato into 10 rounds (1/4-1/2 inch thick). Spread out rounds on baking sheet and brush each side of rounds with olive oil and sea salt. 
3. Once oven is ready, bake sweet potato for 30-35 minutes, flipping halfway through.
4. While sweet potatoes are cooking, make the maple chipotle ketchup (below).
5. Once you are done with the ketchup, start cooking the bacon in a pan over medium heat. Once cooked, place on paper towels and set aside. Keep bacon grease in pan.
6. In a medium bowl, add ground turkey and taco seasoning. Mix it well with your hands and form into 10 small patties.
7. Reheat the bacon grease over medium heat. Add patties and cook each side for about 4-5 minutes or until no longer pink.
8. Time to assemble- start by placing sweet potato rounds on your desired serving dish. Next place a patty on each round, top with ketchup, then bacon, and finish it off with a small sliver of green onion. Place a toothpick through it all and enjoy!

Maple Chipotle Ketchup
1. In a bowl, combine all of the above ingredients and mix well.
2. If you want it less thick, add a little bit of water at a time until you reach the desired consistency.

Hello Friday- boy am I glad to see you! It has been another crazy week where there just aren't enough hours in the day. With work and the move, I am happy to have a nice relaxing weekend ahead. Top Things To Do In Atlanta This December

Boy has it has been an exhausting last few days! Sorry I went MIA, but I have not had enough time in the day to do anything! I mean, who would of thought moving would be so time consuming? 

I finally have everything moved into my apartment, but so much still needs to be unpacked and organized, but I just haven't been able to find the time. I'm hoping to get most of it done this weekend so that I can finally relax and enjoy my new place. Be on the lookout for a home tour in a few weeks once everything is put together!

To New Beginnings!

Hello weekend and hello to new beginnings! Can you believe that the day has finally come for me to move into my own place?! I feel like this was the slowest month of my life! Don't get me wrong, Sandy was a great roomie but it is definitely time for a change. Luckily, we've had a slow work week so I've spent most of it packing and DIY-ing and i'm still not even close to being done. 25 Things You Might Not Know About Me

Since my birthday fell on a Saturday this year, I didn't get to share 25 things you might not know about me. It was really hard trying to come up with new things since I did this for both my 23rd and 24th birthday, but I managed to think of some. I hope you enjoy!

1. I took French for 10 years and still cannot speak it.
2. Pinot Noir is my favorite red wine (except when I want to splurge, then it's Zinfandel).
3. Sauvignon Blac is my favorite white wine.
4. I'm currently watching Mad Men on Netflix.
5. I started listening to Christmas music the day before Thanksgiving (yes, i'm one of those people).
6. This summer I am going to Thailand with my sister.
7. I love trying out new restaurants and new food.
8. My middle name is Marie.
9. My ideal evening is spent cooking and then watching a good movie.
10. Water is my go to non-alcoholic drink- I know, i'm a cheap date!
11. I have an unhealthy obsession with buying books, candles, and blankets no matter how many I already have.
