Instagram Round Up

Happy Tuesday, everyone! I feel like I haven't updated y'all on my life in a while, so for this Tidbit Tuesday I decided to do an Instagram round-up of all the fun things i've been up to lately. I hope you enjoy!!

Mexican Food: My aunt and uncle came into town earlier in the month and each time they come, we go out to eat somewhere fun. This time, we decided on Pure Taqueria. It was a beautiful day, so we waited on a table outside and had some great Mexican food full of margs and guac! 

Devotional & Coffee: This month, I purchased a new devotional called New Morning Mercies. I really love starting my mornings with this book, some coffee, and God. It is great so far! 

Beers: My sister is finally home for the summer and is finally 21...wahooo! We decided to do something to celebrate this big birthday, so I took her to her first brewery experience at Monday Night Brewing. It was a blast and next on the list is Urban Tree Cidery. Stay tuned!

My Aunt, Mom, & I: A few weeks ago, we went down to Watercolor beach to celebrate my mom and aunt's birthday. Yes, they are twins (as you can see above) and their birthday's happen to fall right around Mother's Day, so we got to celebrate it all. It was so good to be back down there with all my family. Definitely a vacation to remember! 

Gracie Loo: The Friday of Memorial Day weekend, Anna and I headed to the Beltline for a picnic and walk with Gracie. We packed a blanket, picnic essentials, and toys for Gracie to play with. We picked up acai bowls from Kale Me Crazy and lounged in Old Fourth Ward Skatepark after walking Gracie around. It was a lot of fun but very very hot. We couldn't stay out there too long or we would of melted. We need to go back another time when it is less hot! 

Wine & Lake: For Memorial Day weekend, the family and I headed up to Lake Lanier for some sun and good times. We boated around, cooked great meals, and Gracie even got some swimming lessons. She is a natural! We also watched 13 Hours, which I highly recommend. I thought it was absolutely amazing and perfect for the Memorial Day weekend!

Raspberry Mango Smoothie Bowl

serves 4

What You Need
10 oz frozen mangos
1 cup water
10 oz frozen raspberries
1 cup light coconut milk
1/3 cup chia seeds
1/4 cup flax meal
1/4 cup honey
Pinch of salt

1. Let the fruit sit out on the counter for 10 minutes so they can defrost. 
2. Blend the mangos and the water until smooth. Set aside in a bowl.
3. Blend the raspberries and the coconut milk until smooth. Add to the mango bowl and combine the two. 
4. Stir in the chia seeds, flax meal, honey, and salt. Let sit in fridge for 15 minutes so the chia seeds can expand. 
5. Top with desired toppings and enjoy!

Happy Friday and happy Memorial Day weekend! Boy am I glad to have a long weekend ahead. This was a busy appointment week for me, so I need the extra day to catch up on things from being out of the office all week. But I am even more excited to be headed up to the lake to celebrate this Memorial Day the best way you can, on the lake with good food, friends, and sunshine. Goal: to come back looking like a bronzed goddess. I mean we can all dream, right? I hope you all have fun plans for this long weekend! See you Monday!

Memorial Day Menu

Thai Meatball Lettuce Wraps + Sriracha Coleslaw

serves 4-6

What You Need
For The Meatballs 
1 1/2 lbs lean ground pork
4 green onions, thinly sliced
1 TBS fresh ginger, minced
2 garlic cloves, minced
1 1/2 TSP fish sauce
1/2 TSP Sriracha
1 TSP sea salt
2 TBS lime juice
1-2 TBS sweet chili sauce

For The Coleslaw
1 bag (14 oz) of coleslaw mix (carrots and cabbage)
10 basil leaves, thinly sliced
5 mint leaves, thinly sliced
3 TBS fresh cilantro, chopped
1 green onion, thinly sliced
1/4 cup rice vinegar
5 TSP light mayonnaise
4 TSP sweet chili sauce

Additional Items
Romaine lettuce stalks for wraps
Fresh limes, for garnishing
Fresh cilantro, for garnishing
Roasted cashews, for garnishing 

For The Meatballs
1. Preheat the oven to 400° and spray a baking sheet with oil.
2. Add all of the meatball ingredients, except the sweet chili sauce, into a bowl and mix with your hands until thoroughly incorporated.
3. Take about 1 TBS of the meat mixture and roll into a ball and place on baking sheet. Repeat with remaining meat.
4. Cook in oven for 15 minutes, flipping once halfway through. Start on coleslaw while meatballs are cooking.
5. Once the meatballs are done, place them in a bowl and toss with 1-2 TBS of sweet chili sauce. 

For The Coleslaw
1. Combine the coleslaw mix, basil leaves, mint leaves, cilantro, and green onion into a bowl and give it a toss.
2. In a small bowl, whisk together the rice vinegar, mayonnaise, and sweet chili sauce.
3. Pour over the coleslaw and mix well. Set aside. 

1. Place meatballs into lettuce wraps and top with coleslaw, fresh cilantro, and cashews.
2. Squeeze some fresh lime over everything and enjoy!

Hello Weekend!

Happy Friday, y'all! Since I just got back from the beach yesterday, I still feel like I am on vacation time. It is wonderful! This morning, I woke up and braved the crowds at the Lululemon warehouse sale and let me tell was worth it. I have been up since 4:30 AM and was in line/shopping from 6 AM - 10 AM. I am exhausted but came home with a bunch of goodies. If you are in the Atlanta area and like workout clothes, I highly recommend you make a trip down there. The prices are about half their normal! I would recommend going early because even when we left, the lines were all the way out of the door. Now I am ready to just relax and enjoy my weekend. See you Monday!

Chocolate & Coconut Energy Balls

makes a dozen

What You Need
1 cup dates, pitted
1 cup almonds
2 TBS cocoa powder
1/2 cup coconut flakes
1/8 TSP sea salt
1/4 TSP vanilla
1 TBS almond milk

1. Place 1/4 cup coconut flakes in food processor. Process into smaller pieces (15-30 seconds), but not long enough for it to start turning into butter. Put on plate and set to the side.
2. Place dates into food processor and process them until the form a ball. Break up the ball with your hands.
3. Add in almonds, cocoa powder, sea salt, and 2 TBS coconut flakes. Process until everything is combined. 
4. Add in the vanilla and milk and process until it forms a ball again. If this doesn't happen, add a little more milk.
5. Roll the mixture into 12 balls and then roll them through the coconut shavings you had set aside. 
6. Store them in an airtight container and enjoy!

Beach Bound!

Hello Friday and hello to being beach bound! Today, I am headed down to Florida for a family filled week down in Watercolor. I am super excited! It's been a while since I was last down there, so I can't wait to see what has changed. Places I am most looking forward to visiting again are: Red Bar, Village Market, and Frost Bites...yum! And even though I will be out of town (completely lounging in the sun), the blog won't stop. Be sure to check back during the week for some great posts! Hemp Seed Breakfast Bowl

serves 1

What You Need
1 cup almond milk
1/2 cup shelled hemp seeds (I got mine at TJ Maxx)
1 TBS chia seeds
1 TBS ground flax seed 
1-2 TBS maple syrup
1 TSP vanilla extract
1/2 TSP cinnamon
Sea salt, to taste

1. Combine all ingredients into a small saucepan over medium heat and bring to a boil, stirring occasionally. 
2. Reduce heat to low and let it thicken for 5-10 minutes. 
3. Pour into serving bowls and top with your desired toppings. I used strawberries, blackberries, mulberries, goji berries, coconut shavings, almond butter, and bee pollen.
4. Enjoy your healthy and delicious breakfast!
