Pancake, Bacon, & Egg Breakfast Sandwich

serves 1

What You Need
1 banana, ripe and mashed
1 egg
2 TSP coconut flour
1/2 TSP vanilla
Dash of cinnamon
1/4 TSP baking powder

Everything Else
Coconut oil
1 egg
1 strip bacon
Maple syrup

1. Cook bacon as desired and set aside. 
2. In a medium sized bowl, mix together the mashed banana, egg, coconut flour, vanilla, cinnamon, and baking powder. 
3. Heat coconut oil in a pan over medium heat and grease 2 circular molds (I used mason jar lids). If you don't have any, that's ok! They just won't be a perfect circle.
4. Place molds on pan and fill halfway with pancake batter. Cook for 4-5 minutes, or until bubbles start to form on top and then flip over (be careful they will be hot). Remove the mold and continue to cook for 3-4 minutes. Continue with remaining batter and set aside pancakes once cooked to keep warm.
5. Re-grease one of the molds you used for the pancakes and place on the same pan over medium heat. Crack an egg into the mold and let cook for 5-7 minutes or until the whites are cooked through and then remove from mold. 
6. Assemble eggs and bacon top of a pancake and then top with remaining pancake. Drizzle with maple syrup and enjoy!
