Thai Chicken Wings

serves 4-6

What You Need
2 lbs chicken wings
Salt & pepper, to taste
1/2 - 1 TBS chili powder
2 TSP curry powder
2-3 garlic cloves, minced
8 dates, softened
1/2 inch fresh ginger, minced
1/4 cup coconut aminos (or soy sauce)
1 TSP fish sauce
1 TBS sesame oil

Sesame seeds
Ranch dressing, for dipping

1. Preheat the oven to 425°. Place a wire rack on a rimmed baking sheet. Season chicken wings with salt and pepper and place on rack. Cook for 25-30 minutes or until no longer pink.
2. If your dates aren't soft, place them in a bowl of hot water for 10 minutes and then drain. Place all ingredients from the chili powder to the sesame oil into a food processor and blend until smooth. Pour into a large bowl and set aside.
3. Once chicken has cooked, let cool for 5 minutes. Then add them to the bowl with the sauce and toss. Before serving, sprinkle wings with sesame seeds. Enjoy!
