Chocolate & Caramel Apple Slices

Happy Halloween!! I can't think of a better way to celebrate this holiday than with chocolate and caramel covered apple slices. These things are boo-tifully delicious and bring back so many great childhood memories! Since these are apple slices instead of whole apples, you don't have to worry about having a face covered in chocolate and caramel. But let's be honest, when something is this good who cares if it's all over your face?!

What You Need
2 apples (I used fuji)
2 (4 oz) boxes of Baker's semi-sweet baking chocolate 
1/3 bag of caramels
Sticks (I used screwers)
Eye sprinkles 

1. Slice apple into slices, making sure they are thick enough to fit the stick in the middle. I didn't use the core pieces. Lay slices out on parchment paper. 
2. Pat slices dry on both sides with a paper towel, absorbing as much water as you can.
3. Using a double boiler, melt the chocolate over medium-low heat. 
4. Place new parchment papper on a baking sheet and then place a cooling rack on top. Place apple slices on the cooling rack, making sure to spread them out.
5. Cover the current side in chocolate for all the apples and then place in freezer for a few minutes so the chocolate can harden. 
6. Once hardened, remove from freezer and flip the apple slices over. Cover that side with chocolate and place in the freezer to harden.
7. While the chocolate is hardening, melt the caramel with 1 TBS of water in a pot over low heat. Be sure to constantly stir because it can burn quickly. 
8. Remove apple slices from freezer and drizzle with caramel, adding the eyes as you go. You have to quickly add the eyes right after the caramel, because it hardens super fast. 
9. Place the slices in the freezer so everything can harden and then remove and enjoy!!
10. Have a caramel apple filled Halloween!
