Hello From Punta Cana!

Happy Friday from Punta Cana! My mom, sister and I are spending a week down here for some much needed R&R. We flew down yesterday afternoon and have started off our first full day exploring the area and checking out the beach. Tomorrow we will spend the day on a catamaran getting some sun and island hopping. Be sure to follow along on Instagram for all the fun (smwrightt). Other than that, we have zero plans. How To Make 2018 Your Year

Wow...can you believe 2018 is almost here? What even happened to 2017?! I feel like it was just yesterday that we were ringing in the new year! Anyways, with the end of one year and the beginning of another comes a time of reflection and goal setting. Time to decide what worked in 2017 and what didn't. Time to determine what you need to change in 2018 to make it your best year yet. Time to set goals that you can actually reach.

It is all a bit overwhelming isn't it? For me, I want 2018 to be a year of self care and awareness. I want to take better care of my body and grow the relationships I have with others. I want to try and detach more from technology and focus more on experiences and real things around me. Like everyone, I want 2018 to be the year I really grow! To help you all kick butt in 2018, i've made a list of realistic goals to better yourself and those around you. I hope this motivates you to make a list of your own. Cheers to a fabulous 2018! 


Christmas Weekend

Christmas is finally here! I am so excited to celebrate with all my family. We don't have any crazy traditions, but each year we celebrate on Christmas Eve with the extended family. My mom, sister and I go to church in the morning and then bake all day. Later, everyone comes over and we have dinner, do a gift exchange and just enjoy each other's company. 

On Christmas day, we open gifts, make a delicious breakfast and lounge around. We then head to meet my Dad for a late Chinese lunch anywhere we can find open. It has grown to become a wonderful tradition! I hope you all have a wonderful weekend ahead! I won't be posting on Monday, but I will be back Tuesday. See ya then!

Christmas Dinner Menu

Wow, can you believe that Christmas Eve is this Sunday?! Where did the month of December go?? For the past few years, we have been celebrating Christmas Eve at my Mom's house with her side of the family. It is always so fun getting everyone together and planning the decorations and dishes. To help make your holiday go a little smoother, i've rounded up some of my top dishes to make for this year's dinner. Happy holidays and I am so thankful for you all!!

Dark Chocolate Sea Salt Thumbprint Cookies


makes 16 cookies

What You Need
2 cups almond flour
1/2 cup arrowroot powder
1/4 cup + 1 TBS coconut oil, melted
1/4 cup maple syrup
1/2 cup full fat coconut milk
1/2 cup chocolate chips, these are my favorite paleo chocolate chips
Sea salt, for topping

Directions
1. Preheat the oven to 350° and line your baking sheet with parchment paper.
2. In a medium bowl, mix the almond flour, arrowroot powder, coconut oil and maple syrup.
3. Roll the dough into 16 balls and then place on the baking sheet.
4. Using your thumb, make an indention in the center of each cookie.
5. Bake in the oven for 8-10 minutes or until they start to slightly brown around the edges. 
6. While the cookies are baking, combine the chocolate chips and coconut milk in a saucepan over medium heat. Stir until everything is melted together.
7. Once you take the cookies out, reapply the thumbprint if necessary. Then pour a little bit of chocolate in each cookie. Let them completely cool.
8. Once cool, sprinkle with sea salt and enjoy!

Hello Weekend!

Helloooo Friday! What a crazy, busy week it has been both work wise and Christmas season wise. I have been trying to finalize all my presents this week to make sure they arrive in time for Christmas. It has not been an easy task, but I have all but one purchased. Yippee!! Tonight, I am going to see The Revivalist play at the Tabernacle. It should be a blast! Gift Guide For Her

Del Frisco's Grille New Menu

If you haven't heard, Del Frisco's Grille just added some brand new menu items! They decided to spruce up the menu just in time for the holiday season. A few weeks ago, I was lucky enough to try some of them and boy were they great! I had never even been to the DF Grille before, so I was excited to have this opportunity to check it out. 

We started off with the artichoke beignets, which were amazing! These beignets were filled with artichokes and breading and then fried to perfection. The best part was the sauce surrounding the beignets! Each and every bite was dipped into the sauce and gave it so much additional flavor.

For one of our entrees, we got these pan seared scallops served over goat cheese polenta and topped with blistered tomato chermoula and pine nut gremolata. The goat cheese polenta was so delicious and complimented the scallops really well. The tomatoes and the gremolata also added a great touch. 

Our other entree was the Quinn's filet burger. This perfectly constructed burger is topped with a bacon onion jam, arugula, gorgonzola, gruyere and grain mustard. How amazing does that sound?! We also got a side of sweet potato fries that were delicious. 

Some other new items include Coffee Braised Pork Shank, Roasted Baby Beets, 14 oz. Bone-In Filet Mignon, 18 oz. Bone-In Prime Rib, Fish & Chips and Baby Back Ribs. If you haven't tried out the new menu yet, you are missing out! I would highly recommend all of the items I got and will definitely be going back soon to try some of the others. 

Double Chocolate Banana Bread

makes 10 slices

Can you believe we are only two weeks away from Christmas?! Time to buckle down on the gift shopping, decorating and baking. Speaking of baking, this bread is great to make for the holiday season. It is packed with quality ingredients and amazing taste. Throw this in one morning and you will have leftovers all week! 

What You Need
4 ripe bananas, mashed
4 eggs
1/2 cup almond butter
1/4 cup coconut oil, melted
1 TSP vanilla extract
1/2 cup coconut flour
1/2 cup cacao powder
1 TSP baking soda
1 TSP baking powder
1/4 TSP sea salt
4 oz chocolate chips, these are my favorite paleo chocolate chips

Directions
1. Preheat the oven to 350°and grease your loaf pan.
2. In a mixing bowl, combine the mashed banana, eggs, coconut oil, vanilla extract and almond butter. 
3. Next, add in the the coconut flour, cacao powder, baking soda, baking powder and salt. Mix well on low/medium speed.
4. Then, fold in the chocolate chips.
5. Spread out the batter evenly into the greased loaf pan and bake in the oven for 40-50 minutes or until a toothpick inserted into the middle comes out clean. 
6. Let the bread cool for 30 minutes and then enjoy!

Welcome to the (almost) weekend! I feel like I have been going a million miles a second this week. I've been working like crazy and attempting to online Christmas shop at the same time. Luckily, i've crossed off most of the items on my list! Here in Atlanta, they are calling for snow today. Can you believe it?! I would be shocked if it happened!

This weekend is pretty busy! I am going to be braving the crowds for more Christmas gifts, hanging out with friends and exploring more of my city.
